I keep getting stuck at sandwiches, leftovers, and salad. I thought of doing a thermos full of soup. There's gotta be more to lunch than that!

All I have at work is a microwave which I won't use, so I am a bit limited.

Any other ideas?

All depends on what you like, but I make a bulgar wheat salad with edamame, tomatoes, cucumbers and onions with a light dressing that rocks--it keeps you full, and is adventurous (as opposed to sandwiches :)) I get really bored with food, so it's got to be interesting. I also take leftover homemade pizza, or if you like sandwiches, shake it up and do alternatives--falafels in pita, or something like that.

What about making the sandwiches more special? Maybe served on Pita or a bagel instead of bread. Add sprouts and special condiments. I would bring fruit too! That will make your lunch both healthy and delicous :)

I love the pita idea! We get a big box of fresh organic produce delivered every week, so sometimes I just graze on fruits/veggies throughout the day, which I really like. Thanks for getting my brain going. I see a yummy pasta salad in my future!

When we need to break out of the "sandwich" routine here at home we do homemade tortillas with organic hot dogs, mustard and kraut. They're super easy and so yummy!

I really like taking mini dinners with me- like roast beef and roasted veggies. Yummy. Another thing I like to do is make sandwich rollups in a tortilla. So I use lunch meat or whatever and then roll it up like a taco. Hillbilly Housewife has some good lunch ideas too.

I like to make peanut butter and honey sandwichs with pancakes and waffles. I also do a lot of burrito wraps with all kinds of things in them, eggs and cheese, beans and veges, carrots and celery with ranch dressing, steamed broccoli or cauliflower with cheese. I even have put leftover corn with green onions and diced ham, it's amazing with a little italian dressing! Try a baked potato with a seasoning blend shaker to sprinkle it with. That's one of my 10 y/o daughters favorite. She eats it like an apple! Don't forget the old standbys of fried chicken, mashed potatoes (which make a great sandwich), and corn on the cob. All great cold or hot!

I make a "pasta" salad with couscous, diced tomatoes, sliced cucumbers, fresh parsley, and little olive oil and lemon juice. It's really good chilled, especially if you top it with a little plain greek yogurt.

Katrina, you could also use pita pockets instead of bread. They sell different flavors of pita too. One of my favorites is the onion flavor.

A big favorite of ours is flour tortillas spread with cream cheese and avocado. Just spread and then fold the tortilla over (or do two separate tortillas) and cut into wedges. I also use the cream cheese and avoc spread tortillas to then make a wrap with cucumbers, carrots and red peppers cut into matchsticks. I have not done that one in a while...now that I mention it, it sounds delicious!
