Does anyone have a good recipe for the crock pot that uses chicken breasts? I am drawing a blank and look at everything and can't figure out what to make! Tonight is chicken night. We've been eating a lot of pasta lately so I don't want to make chicken parmagan (sp?) which is without breading. Got any ideas?

I never cared for chicken from the crockpot. It always tasted like wet paper towels. So I don't make chicken in the crock.
I poach breasts for chicken salad. I bake breasts with BBQ sauce. I have used the boxed mix for chicken.

Hi Cynthia,
This recipe is NOT for the crockpot but is very easy to make and delicious too!
Apricot-Dijon Glazed Chicken Breasts
4 Boneless, skinless chicken breast halves Salt and ground black pepper 1 Jar (12 ounces) apricot jam 2 Tablespoons honey 2 Tablespoons Dijon mustard
Preheat the oven to 350 degrees. Rinse chicken breasts; pat dry. Transfer to a glass-baking dish sprayed with nonstick cooking spray. Season with salt and pepper and set aside.
Bring jam, honey and mustard to a boil in a small saucepan over medium heat. Reduce heat to low and simmer until mixture is reduced by half and thickened.
Spoon apricot mixture over the chicken breasts coating evenly. Bake chicken, basting occasionally with sauce every ten minutes, until juices run clear when chicken is pricked with a fork, about 40-50 minutes. Serves 4.
This tastes great cutting any leftover chicken breasts into strips and served atop a bed of mixed greens with glazed pecans, Gorgonzola cheese with pear slices and Balsamic Vinaigrette.

If you want good chicken from the crockpot I have only one suggestion. Lots of taters, carrots, and an onion in the bottom with only enough water to come to the top of the heap. Then you put the chicken on top of that, above the water. Then top with your favorite seasoning, ours is rosemary and garlic. It takes four hours on high or six on low for my pot, but it runs really hot compared to everyone I know.

Thank you everyone for your thoughts and ideas. I will have to try that recipe with he apricot jam. It sounds good.
I ended up using a recipe from the Make it Fast, Cook it Slow. It was actually a sloppy joe recipe that used turkey but I did it with chicken breasts. Once it was done cooking (about 6 hours), I shredded the chicken and put it back into the sloppy joe mix. Everyone really liked it. I thought that the chicken turned out moist.

i like first putting in two cans of beans like, black and white with all the liquid drain on one can of beans and half drained on the other can, then put in boneless, skinless chicken breasts , season with garlic and onion powder, can also use basil, itialin seasonings, what ever seasonings you like, then top with a can of cream of chicken or whatever cream of soup you like and cook on low for 6 hrs... my grandkids just love this meal.... enjoy, rose
