Hello Friends!
I just purchased some fresh rhubarb at the farmers market and was hoping someone has a wonderful pie recipe!! I LOVE RHUBARB :)

I love this recipe from Mennonite Girls Can Cook blog :)
Rhubarb Streusel Pie
1 unbaked 9 inch pie shell 4 cups rhubarb, cut in 1/2" lengths 1 1/3 cups sugar 1/4 cup flour 2 eggs, slightly beaten 1/2 teaspoon nutmeg
1.Combine sugar, flour and nutmeg. Add to eggs and beat. Stir in rhubarb. 2.Pour into pastry lined pie plate. Topping: 1/4 cup oats 1/2 cup flour 1/2 cup brown sugar 1/4 cup butter
1.Mix topping ingredients until crumbly. Sprinkle evenly over pie. 2.Bake at 425F for 15 minutes. 3.Reduce heat to 350F and bake about 40 minutes longer...until rhubarb is cooked and topping is brown.

Hi Sadie Mae - this is not for pie, but a very quick easy cake that my family, friends and neighbors enjoy!
1 white or yellow cake mix, or from scratch for a 9 x 13 pan 2 - 3 cups chopped rhubarb 1 1/2 cup sugar 1 pint heavy whipping cream
Prepare cake according to directions. Pour into a prepared 9 x 13 pan. Mix rhubarb with sugar - spread rhubarb evenly over top of batter. Pour the cream over all. Bake at least one hour in a 350 degree oven.
The rhubarb sinks to the bottom of the cake pan and the cream forms a custard like filling with the rhubarb. I serve the cake with the rhubarb side up, it is great warm with whipped topping or ice cream.

I LOVE rhubarb and plan on trying out these recipes soon. I thought I'd share one of mine, this has been in my recipe box for decades and I think was originally one of those recipes that the local grocer had hanging from a pad in the produce aisle, but it is a favorite of mine.
Rhubarb Custard Pie
1 unbaked, double pie crust for 9" pie 2 1/2 cups unpared rhubarb, cut in 1" lengths 1 1/2 cups sugar 1/4 cup flour 2 eggs, slightly beaten 2 tsp lemon juice dash salt 2 TBSP butter 1 TBSP sugar
Make bottom piecrust and place in 9" pie plate; refrigerate. Preheat oven to 450F.
In large bowl, combine rhubarb, sugar, flour, eggs, lemon juice and salt. Turn into lined pie plate. Dot with butter.
Top with remaining piecrust and cut slits for steam vents. Seal edges well, moistening if needed. Sprinkle with 1 TBSP sugar. Bake at 450F for 10 minutes. Reduce heat to 350F and bake another 60 minutes. Serves 6.
Note: the original recipe states the 350F bake should be 30 additional minutes, but I always have needed the 60 minutes. Might want to check on it at 45 minutes, just to be safe in different ovens.

Catherine, Thank you so much for this recipe. My great grandma used to make this pie & no one has the Rhubarb Lemon Custard pie recipe. Thank you!!!

I'm thankful for this thread! I bought some rhubarb at the farmer's market and am trying to decide how I want to use it. I have one last bag of frozen strawberries from last season, but I'm not sure I want to use them with the rhubarb (even though I only have to wait less than a month for local fresh strawberries here!). I'm looking forward to everyone's suggestions! |

Yesterday I made the Sour Cream Rhubarb Pie recipe from allrecipes.com and it was FANTASTIC! I got the idea from another topic on this site- I get the best ideas from "us"!! |

I have tons of rhubarb right now and I posted the sour cream rhubarb pie link at all recipes in another post. I also made the fresh rhubarb pie recipe that is posted on that sight and it was wonderful and simple. I use www.allrecipes.com all the time. There is a rhubarb apple jam recipe there that is also great!

Here's another cake recipe: Upside Down Strawberry Rhurbarb Cake
4c cut up rhurbarb-place in 13x9 greased and floured 1 sm strawberry jello-sprinkle on top 1/2c sugar-sprinkle on top 3c miniature marshmallows-sprinkle on top 1 yellow or white cake mix-prepared as directed on box and pour on top Bake 350 45 to 60 minutes Cool and turn out of dish
