| i have abotu 30 laying hens who are blessing me with about 2 dozen eggs a day. i have to remember to bring them to tow and sell some tomorrow or the fridge is going to have room for nothing but eggs! i guess when i start having milk from the goat and cow i will have to buy a second fridge just for eggs and milk!! i also have about 20 roosters that i need to butcher but it seems that every day my hubby has off he is having to take me to a dr appt *sigh* i am going thru a huge battery of tests right now and its taking every spare moment. peace connie in alaska |

Isn't it wonderful!
We bought an old-new frige and put it in one of the barns for the same reason. You gotta love and over abundance-especially when you finaly DO get the big requests and can sell everyone the quantities they want!
Too bad the hens don't lay like this in winter oh, say around prime baking time and the holidays. It makes me want to cry |

Well hello Connie. I've been missing you. It sounds like you have not been well. I hope they can find the problem soon.
I have an extra fridge just for that also. I have it in the milk room. I will also use it for cheese soon. It comes in very handy around here. I'm so glad your hens are laying so good. Mine have slowed down a little. I get 10-12 eggs a day. And they are all sold as fast as they are laid!

I have a fridge just for eggs, fresh garden produce and milk!
I will be praying for you Connie!
Susie, fresh eggs can last quite a long time in the fridge. If in question float it and open it in a small bowl before using it in a recipe or meal.

If it's any help to know, eggs sold in the supermarket are ALREADY 6 weeks old!
And to think people keep them around in their friges for way longer than that too.
So any eggs we farmgals may get I think can certainly hang around for a few weeks. |

| Make up some pasta and dry or freeze it for when the production is less, like in winter. You could actually sell that in town too with your extra eggs. I'm planning on doing that, different types, spinach, basil, tomato, all kinds of pasta! Now if I could just convince my husband that I need the attachment for my KitchenAid . . . |

Eggs kept out of the fridge will go bad much quicker. I always refridgerate mine. Eggs in the fridge can keep for 2-3 months and sometimes even longer. When you buy eggs in the store they have likely already been in storage for 6 to 8 weeks! When I sell eggs they are always less than a week old!
Julie - most states require that any processed items (like pasta) be made in a Health Department inspected kitchen. A lot of people make and sell things without this knowledge and most will get away with it but it is Risky. If you get caught the fines are HUGE and if anyone ever got sick after eating something you made and you dont have liability insurance you could be sued for everything your worth! If you dont have a license and dont have access to an inspected kitchen I wouldnt recommend it!

good to hear from you way up there in the frozen land... ..lol. How are you doing? Hope your test come out okay. Will pray for good results.
I have an extra fridge in the basement too. Our not so old one upstairs went out and my husband thought we should get a little bit smaller one so it didn't have to be crammed in the space with no leeway on either side. Big mistake. Now I have so much less room in the new one and am always running up and down the stairs putting eggs in the fridge. I don't know what I will do when I start getting some goat milk. I need a third one. I wish I could find one of those clear sliding fridges you see at supermarkets for a reasonable price. I think that would be really cool to have.
I am getting abut 2 dozen eggs a day and don't have enough customers. I have 19 dozen right now. The dogs are getting eggs on their dogfood tonight. After my inlaws leave I think I will try to make some noodles to freeze. Do they freeze pretty well and how long will they keep that way? Also if you dry them how long will they keep?

| You can also freeze your eggs so when production is down in the winter,..you have eggs to bake with! Eggs will keep up to a year in the freezer. |

| hi laies! I have missed you so much! sadly the health sucks and tests are getting me wohere except into bankruptcy. I am going to have to go "outside" (out of alaska) for specialists. I will need a gastroenterologist, a neuropthamalogist, possibly a cardiologist and or surgeon, and hopefully a good diagnostician. We have no clue what is going on but what ever it is is getting worse and they are finding NOTHING in tests, they are looking at doing exploratory surgery. I have lost almost 80 pounds in less than a year and look like a walking skeletin. Its very hard for me to take care of the animals (in fact i do very little for them my son does most of it but he is graduating in 2 weeks and will be getting a job and is hopeing to get a place of his own soon). Do any of you know any of these specialists per chance? Summer is coming so at least i dont have to deal with the severe cold much longer! I must go lay back down soon and have 5 dozen eggs to wash first so better quit typing and get busy! peace connie in alaska P.S. my hens didnt quit laying in the long, cold and dark winter but sadly most of the eggs froze and cracked so had to throw them out! |
