Siobahn was wondering so here it is ladies. Enjoy!

Red Onion Jam

3 cups Red onions
1 ½ cups apple juice
½ cup Red wine vinegar
1-½ teaspoons rubbed sage
½ teaspoon black pepper
4 cups granulated sugar
¾ cup firmly packed light brown sugar
1 (1.75 ounce) package of powdered fruit pectin
1/2 teaspoon butter


1)Peel, quarter and thinly slice red onions. Measure 3 cups into a 6-8 quart saucepan. Stir in apple juice, vinegar, sage, and pepper.
2)Measure sugars in a different bowl.
3)Stir in fruit pectin into onion mixture in stockpot. Add butter. Over high heat, bring mixture to a full, rolling boil stirring constantly.
4)Quickly stir in sugars. Return to a full, rolling boil, and boil exactly 5 minutes, stirring constantly.
5)Remove from heat. Skim off any foam with a metal spoon. Ladle quickly into hot, sterilized half pint jars, filling to within 1/8-inch of the tops. Wipe jar rims and threads. Cover with lids and screw bands tightly. Process in boiling water bath for 5 minutes. Yield: 5-6 (half-pint) jars.


Serve with cream cheese and crackers or as a glaze for roasted chicken. We also like it on Roast beef sandwiched with Havarti on grilled Sourdough :)

This jam sounds very interesting. So when you say "thinly sliced" you mean diced? Do you strain the onions out or leave them in?

Julie, the onions are sliced thin NOT diced. You do leave the onions in the jam :)

I definitely will - I am planting red onions this week actually, and since I work with cheese I am always looking for new things to pair with it, especially that I can make myself.

I'm planting another row of red onions this week, so now I'll make it two! That sounds just yummy.

By the way Amy Grace, your signature line is such a good reminder for me! I tend to buy more than I ought to with dollars I don't necessarily have. Every time I read one of your posts it's a gentle reminder that I carry with me when I'm out shopping. Gotta say I've recited it quite a few times since I found this forum.

Prayer costs nothing, but is worth the most.

By the way, girls . . . I've had Sharon's Red Onion Jam and it is WONDERFUL!!!!!
We like it on white corn tortilla chips with melted extra sharp white cheddar!!!! YUMMY!!!
Good on all sorts of things . . . YUP it is!!!

Amy Grace, it's so funny that you should say "kissin' don't last, cookery do". After my Grandma passed away, my mom gave me my Grandmother's old 4"x 2" cutting board that had that exact quote on it. I keep it on my windowsill above the kitchen sink. I read it everyday!

My computer is upstairs and I can smell all the yummy up here!
I think it could be a glaze for just about anything--I was going to make poached salmon for dinner, now it will be a nice glazed salmon!

Teresa - that is too funny, my grandma had it written on her kitchen blinds above her kitchen sink. Along with her recipes for basic rolls and upside-down berry cobbler:)

I use dried. If you decide to try fresh I would definitely reduce the amount. Hope you like it!

This sounds wonderful......I bet this would be good to spoon the jam over a brick of softened cream cheese and eat as an appetizer with crackers. I try to find pepper jelly over the holidays and spoon over cream cheese. It makes a pretty and easy dish! Smiles, Beth
