I am giving up on finding the wild violets so does anyone have a wonderful, family recipe for a berry jam to share?

I had the neighbor behind us in Ohio tell me to take all the pears that I could from his pear tree. So I got three brown grocery bags full. I let them ripen in the closed up bags. Then I peeled and sliced them into a big stock pot. I added cinnamon, cloves, and ground ginger and let it cook all day. I got some really yummy pear butter.

I did kind of the same with a flat of strawberries that I got for 5.00 at an Amish market. I put them into a pot with sugar and cooked it down and made a fruit spread. It was great heated up and poured over cake and ice cream too.

I have made banana jam in the past. I don't have this recipe. But you use fresh oranges and lemons and let it cook.

ONe of my favorites is mint jelly. You just make a strong tea from the leaves and follow the directions for making jelly on the pectin box.

Of late, our favorite is mixed berry jam. I had fruit in the freezer which needed using so I just mixed strawberries, raspberries, blueberries and blackberries in no particular amount (well less blueberries than the others) to make the right amount for the recipe and it turned out wonderful!

A favorite of a couple of friends (they get some for Christmas) is Peach-pepper. I make peach jelly and add one or two small slices of jalapeno in the jar before processing it. After canned and sitting for a while, it's fantastic to use on crackers or a glaze for roast or ham.

Robin,

Here is a recipe for Vanilla-Pear Jelly. I make it every year :)

Vanilla Pear Jelly

8 large, ripe Anjou pears, stemmed and blossom
ends removed, then quartered with peel left on
2 tablespoons vanilla extract
3 1/2 cups cane sugar
1 (1.75 ounce) box powdered pectin

Wash fruit. Adjust enough water to barely cover pears in a large saucepan or kettle. Boil uncovered for 35-45 minutes. Fruit should look translucent. Strain juice through a double layer of cheesecloth or a jelly bag. Do not try to hurry this by squeezing the fruit or the juice will become cloudy. The peel helps give the juice a pale yellow color.

Heat 3 1/2 cups of the pear juice (if you don't have enough juice, you can add as much as 1/2 cup water), add the vanilla and the pectin. Bring to a boil and add the sugar. Boil until the sugar is dissolved and the boiling mixture cannot be stirred down (about 10 - 20 minutes) You'll begin to see the mixture thicken on the back of a wooden spoon and form 2 side-by-side droplets at this point.. Turn down the heat, skim off the foam, and bring to a boil for another five minutes. Using you "spoon test", the jelly should be thick enough to "sheet" in small waves on the back of the spoon.

Pour into sterilized jars and add lids. You may want to boil the filled jars for another five minutes after the lids have been put in place. You'll know either way if the seal has been made by placing your finger in the center of the cooled lid. If it doesn't spring back, the jar has been sealed. You may also recognize the "pop" during the cooling process, which signals that the seal has been made. Store in a cool, dry place.

Makes 6 to 7 (8 ounce) jars.

Delicia and Julie: Do you girls ever get to Indiana? My families yards and my yard is covered with violets! I made a total of 36 jars with only one days worth of picking. You can find violets in every forestry and public park here I believe. I only mention it because my DH used to deliver in both your states when he was driving a truck for a living and he was a day runner, so he was home every night. I don't know how far away from Indiana you live but it's still covered with violets around here.

Nicole~~Thank you so very much! Your recipe sounds perfect! I love the idea of it being low sugar. Nothing is worse than a jam that tastes only of sugar! I will be making this tonight! Can't wait to see all my pretty jars lined up!

Nicole, I made the strawberry jam last night and just tried it on toast oh my gosh it is wonderful. Thank you for sharing your recipe. I will be making it often.

Angela, I am actually not to far from Indiand. We go to Brown County sometimes are you close to there?

I am going to try the red onion jam that I saw somewhere on one of the post. I like different things and it sounds really good.

I just made strawberry jam using MaryJane's recipe with chillover. It's just beautiful and I'm licking the pan! Delicious!! I can't believe I've made strawberry jam and violet jelly. Me! Thanks everyone for the encouragement to be me!
