Finally found a minute to reply to an e-mail about a few lavender recipes I have and thought someone else might be interested, too.
Lavender sugar is too easy...just mix a handful of lavender buds into a couple cups of sugar, shake it every few days and use it in tea or iced drinks or as the sugar in your favorite sugar cookie recipe... It's a very subtle lavender flavor.
One thing I really like to do is make lavender syrup and use it in place of simple syrup in mojitos or even on top of pancakes or waffles. Just boil equal parts lavender sugar and water for a couple minutes. I keep mine in a mason jar in the fridge. Don't know how long it keeps 'cause I never keep mine long!
Lavender scones are from I don't know where, but it's not my creation (wish it were). Boil 2/3 cup milk with 1 TBS lavender flowers & cool (strain it or not, your choice)
2 1/2 c flour 1TBS baking powder 1/2 tsp salt
1 stick of butter 1/3 c sugar
Whisk together the flour, baking powder and salt. Cut in 1 stick butter. Mix in sugar (don't stir, be gentle.)
Slowly add cooled lavender milk. Mix with a fork until dough forms a ball.
Gently knead dough gently & roll 1 1/2 inches thick. Cut dough into triangles. Bake at 400 degrees for 10 minutes.
Oh please bake these. I bake lavender scones in the spring time when the lavender is in bloom (not this recipe but very similar) and when slathered with good butter and some plum jam---oooh it is heaven in the morning with coffee. You will love them. N@n
