I've been participating in a discussion about growing blueberries in the Garden Gate forum. I was asked to share my Blueberry Crisp Recipe. Decided I'd post it here for all to see and let them know it's over here. Enjoy!

Berry Crisp

Topping:
1 C Flour
1 C Sugar
1 Tsp Baking powder
1 Egg beaten

Filling:
2 Tbs Flour
3/4 C Sugar
4-5 Cups Fresh or Frozen Berries - blackberries, blueberries, raspberries or strawberries (I use a mixture of 2 or 3 kinds)

1 Stick Unsalted Butter - melted

Preheat oven to 375 degrees. Combine flour, sugar and baking powder in a bowl. Make a well in the center of the dry mixture. Blend in the egg and mix until topping is crumbly.

Mix flour and sugar in a small bowl. Put the berries in a large bowl and sprinkle the sugar/flour mixture over the top. Stir to coat the berries.

Put berry mixture in a well greased or buttered 8 x 8 x 2" glass baking dish. Sprinkle the topping mix over the berries. Drizzle the melted butter evenly over the topping mix.

Bake for approximately 45 Minutes. I recommend putting a cookie sheet or jelly roll pan under the baking dish to prevent a mess if it spills over the edges during baking. Serves 6-8

Add a scoop of icecream or frozen yogurt for a really good treat!
