Ok, I just got home after being gone for 10 weeks and all my potatoes sprouted. They were even in the coolest room in the house in the dark, so all the sprouts are white. Can I cut the sprouts and still transplant? Can I cut and eat? The potatoes are still rigid. ***Sigh**. being gone can be a pain. thanks, Laurie

Nope, cant cut, the energy is going up into the sprouts.
Wouldn't eat them if they show any kind of green, they'ed give you a bad time.
Can you plant them in some large tubs till the ground gets warmer?
Mother's day is about when we plant warm weather plants here.

Potatoes are a cool weather crop and won't have trouble with frost (on the plant growth) because, well, the tuber is underground and you keep mounding the dirt around them as they grow from the furrow. I don't see why you can't dig a furrow now, plant them and see what happens.

Can't eat them, though. Yuck

Mine sprouted before I got to them last year too and I went ahead and planted them - they were just fine. I read somewhere that potatoes sprout according to where spring comes where they came from (I think it was in A,V,M) so even if you store them the very best way they are already programmed to sprout at a certain time. Good luck, you should be okay!!
