We are celebrating Violet's birthday next Saturday, and we have chosen Mexican fare. I'd like the menu to be easy, as there are children coming, and some picky eaters. But, I'm also a purist, so it's got to be good quality food.
There will be about 30 people, kids included.
I'm looking for a chicken tortilla soup recipe that can preferably be made ahead and rewarmed (without the tortillas, obviously).
Anyone?

I have an easy easy chicken tortilla soup recipe for the crock pot:
4 Chicken Breast Halves 2 15 oz cans black beans..undrained 2 15 oz can Mexican stewed tomotoes 1 C Salsa 4 oz can chopped green chilies 14 1/2oz can chopped green chilies 14 1/2 oz can tomato sauce tortilla chips 2 cups grated cheese
1. Combine all ingredients except cheese and chips in slow cooker 2. Cover and cook on Low 8 hours 3. Just before serving remove chicken breasts and slice into bite-sized pieces stir back into soup 4. To serve put a handful of chips in each individual soup bowl. Ladle soup over chips and top with cheese
You can use mild salsa or omit it if you're concerned about it being spicy.

Thanks so much, Tanna (for the birthday wishes AND the soup recipe!)...this is exactly what I'm thinking of: something made in a crockpot that I can put on and forget about until supper is served.

I made 5 hugs trays of enchiladas for DS baptism celebration. It was easy and tasty. Some were cheese and meat and some were chicken. |

Chicken Tortilla Soup My sister-in-law once made a pumpkin soup for us. Though it was unusual, it is the perfect compliment to the mildly spicy flavors of the soup. Sautéing the spices with the onion and garlic bring out the essential oils and flavor. We serve this in bowl and everyone put in their own crushed tortilla chips and cheddar cheese. Along with a green salad this makes a great meal. This makes a huge batch and obviously can be cut in half or quartered. All of the ingredients can be adjusted to what you have on hand and what your family likes. I cook with a little of this, some of that. So just have fun and enjoy this recipe. You can freeze extra or pressure can it in quarts at 10 pounds pressure for 1 ½ hours. This made all the soup our family could eat for two meals and 14 quarts for the pantry. It freezes well, also.
10 lbs chicken thighs 1 ½ to 2 gallons water Cook over a medium heat until the meat falls from the bone. Then remove the chicken and set aside to cool.
Sauté in a little oil until soft and flavorful: 4 large onions, chopped 1 head of garlic cloves, minced 3 Tablespoons chili powder 1 Tablespoon cumin
Add: Chicken broth seasoning to taste 2 jalapeño peppers, seeded and finely chopped 4 cups chopped pumpkin or winter squash 1- #10 can diced tomatoes and juice 3 green peppers, chopped 3 medium zucchini, coarsely chopped Cook until all vegetables are tender. Add: 2 large bunched cilantro, chopped 4 cups fresh or frozen corn 4 cups cooked kidney or black beans Heat thoroughly over medium heat and adjust seasonings.

Thanks so much Kristine! I am keeping both of these for my menu's at home and at the party. I just know that I'm sorry I have a sandwich for lunch when these sound so good!!!
