...in chicken pot pie!

I grew up raised by a single mother in subsidized housing and spent many a night in front of the cartoon network with a Banquet Chicken Pot Pie for dinner. I don't blame my mother. I'm sure she really needed that quiet time at the end of a long work day and that frozen pot pie and hour or two of cartoon vegging were her little piece of sanity. But, unfortunately I did not develop a love of pot pie early on and never liked it later in life either. Bland, bland, bland.

But last night I decided to give the recipe in the last issue a try because it just looked so beautiful. It was amazing!!!! I love the little cream cheese crusts. They are the perfect twist on the whole covered pie thing. I made mine with little mini cookie cutters (about 1") so they were like crouton sized. This will definitely go on a regular menu for us and I will never turn my nose up at pot pie again! Well, at least not this pot pie LOL!

That does sound good. I think I might try and make one next week.

I always thought the little pot pies were such a treat! I make my own homemade now, but I buy the little ones on occasion. Marie Callenders ones are pretty good too and cook in the micro.

We acgtually get excited when we make the little Banquet pot pies....Its weird how some memories stick with you in a ghood way or bad way. I still love potted meat and my sister who also got the sandwiches as a kid cant stand it. She is off of kippers too and I still love them...odd...

My husband is not a big fan of pot pies either, because of the Banquet Pot Pies he had when he was a kid, but this will surely win him over!

Okay, I made the chicken pot pie last night for dinner and all I can say is....YUM! Thanks Mary Jane! I highly recommend you give it a try! Hubby even gave it two thumbs up and told me to keep the recipe!

Oh my... I can remember being newly married and thinking I was doing good keeping frozen pot pies on hand, to serve with a salad to husband and I!!!!!
I love homemade potpies now!
I can't wait to try Mary Janes recipe, now if my magazine would only get here!!!

Made this again tonight for company. I completely forgot the peas at the end because I was so worried about getting dinner on the table. It was still amazing and our guests raved about it. I also had a thought while making the crusts that I could make several batches all at once and freeze them for a couple hours on cookie sheets then put them in zip lock freezer bags. That way the meal becomes that much quicker when I need it to be. No making dough and cutting it out and waiting for it to chill. Just pop them on a cookie sheet and throw them in the oven while cooking the "filling".
