I have to serve dessert for a meeting in Jan. and I need a suggestion for something different, it seems like I use all my good stand bys for the Holidays and I would like to try something different. Thanks, Karen

Karen, how many people do you need the dessert for and are there any food allergies that need to be addressed?

Well, I have an excellent Williamsburg Orange cake recipe. It's very refreshing and different. We make it every year for Christmas, but I think my family may be the only ones. My mom started doing it when I was little and we called it the "Jesus Birthday Cake".

Williamsburg Orange Cake

2 1/2 C Flour
1 1/2 C Sugar
1 1/2 tsp baking soda
3/4 tsp salt
1 1/2 C buttermilk
1/2 C butter or margarine softened
1/4 C shortening (I just used butter here also)
3 eggs
1 1/2 tsp vanilla
1 C golden raisins-cut up
1/2 C finely chopped nuts ( I use pecans)
1 Tblsp grated orange peel


Heat oven to 350. Grease & Flour baking pans. Measure all ingredients except frosting into large mixer bowl. Blend 1/2 minute on low speed, scraping bowl constantly. beat 3 minutes on high speed, scraping bowl occasionally. Pour batter into prepared pans and bake layers 30 to 35 minutes. Oblong 45 to 50 Cool and frost.

Williamsburg Butter Frosting

1/3 C softened butter
3 C confectioners Sugar
3 to 4 Tbp Orange juice
2 tsp grated orange peel

I usually double the frosting recipe, but I like a lot of frosting. :)

Sarah that recipe sounds great, there will probably be 10-12 people there and of course they won't all eat because some will have started diets for thier new years resolutions. I always serve this month and it is funny the diet people are usually in the kitchen munching away but no plate for them. Thanks, Karen

You can have little bowls of plain yogurt with some fresh chopped mint, lemon zest and a little honey drizzled over it for the "dieters".

There Is a chocolate coconut chill over recipe from MJF, it Is in the Idea Book page 110. I made it for a dinner party. It is wonderful! It was super special but still rather easy!
