This years Thanksgiving will have a few changes. I usually do a standard turkey dinner but need to figure out how to include a vegetarian and a diabetic without changing the whole dinner or driving myself crazy! I am thinking of doing something with fish or seafood in the crockpot, since the oven is going to be pretty full. I plan to make enough so others can have some of that too. There will be one dessert using a sugar substitute, what it will be is still undecided. I will probably forego the carmeled type sweet potatoes and substitute a sweet potato apple combination instead. Any suggestions?

Pumpkin Pie with Splenda isn't half bad. I have a diabetic friend at church.

Just make sure you let people know where the artificial sweeteners are....I'm really allergic to them :)
I think the idea of a fish/seafood in the crockpot is excellent (as long as the vegetarian eats fish). Good luck.

I make my cranberry sauce with splenda and it tastes good. I add zest from some kind of citrus fruit and splenda , a package of fresh cranberries and just about a 1/4 cup of water...bring to heat on stove and stir until the berries have mostly popped...Simple sauce.
My sweetie-pie is diabetic and I have been working every year on cutting the carbs and still keeping with our family traditionals as much as I can.

Im a vegetarian and I always do a stuffed acorn squash with veg sausage and cornbread stuffing as the main dish Each person gets a 1/4 of the squash. Most everything else is the same as traditional. Does your vegetarian eat fish? (pescatarian)

Like Sarah, I was going to suggest a stuffing/squash kind of thing. I actually have a great Native American recipe called "Pequedepah" that is basically a winter squash, halved, stuffed with wild rice, fresh herbs and fruit (dried cranberries) and nuts. You could really make a nice little side that way for the vege folks, or anyone else who might be interested. There is no sugar, save the natural sugars in the squash.

Thanks for the suggestions. Farmgirl friends are the best! As far as my sister the vegetarian goes she does eat fish and seafood, DH has offered to grill either salmon with BBQ sauce or honey marinated shrimp which will cover that base(and keep him out from under foot!) Dianna, the diabetic's wife will bring a safe desert for him, my last diabetic safe dessert wasn't worth the effort. Annika, the splenda cranberry sauce is now on the menu. Jonni, that Pequedepah sounds great! What herbs do you use? Sarah's stuffed squash sounds delicious too, I will definately try that soon. Brenda, thanks for the diabetic recipe sites, I'm putting them in my favorites for future use as well.
