Has anyone canned brussel sprouts? I planted by seed in my fall garden and it looks like they all germinated. I may have a great many and no freezer space. I did find a recipe for pickled brussel sprouts, but I would love to just can them as a hot vegetable or for use in one-pot dishes.

I don't see why you couldn't but I think since they are low acid you would just have to do them in the pressure canner. Do you have one and if so do you have a book with it because it would tell you how to do it. I love brussel sprouts.

Miniature cabbage, thats what I thought they were when I was a kid, lol. I love brussel sprouts, I pick mine small, I like the flavor better, and they are more tender. I have never canned them, but I don't see why not, and yes I agree, probally will have to use the pressure canner.

Lucky! My chickens destroyed my brussels sprouts and they are my favorite vegetable. I dont know the process for canning them but they are NOT acidic so I am sure you would have to pressure can. However canned brussells sprouts (the store bought kind) are AWFUL!!!! In my opinion! They get mushy and soggy and have no flavor! I think I would find freezer space. The blanched and frozen ones tend to get soft and mushy as it is but still keep their flavor and I think they would be perfect in one-pot meals.

Thanks for the responses. I do have a pressure canner and when they are ready, I'm going to give it a try. If it is a flop, well, that wouldn't be the first time I discarded something.

I love brussel sprouts! I just don't fix them that often. Does anyone have any fave recipes? I'm thinking of serving them for thanksgiving. I didn't know you could can them!

I just steam them . . . they're so good that way. You can add butter and/or garlic salt!

I also steam them, ( I pick them small, I like the flavor better), I then use a little olive oil, with garlic crushed in it, warm it and dip, yummmmmmm
