I made Nancy Jo's recipe of Pecan Squares. She posted hers on her Oct. 4th blog. Just got them out of the oven and I cannot wait for them to cool a bit.

I tasted them--SCRUMDIDDLYUMPTIOUS. so there!!

So how can I get this recipe? I did'nt see it on the blog, only the pic. My hubby loves pecan pie so this would go over really well with him. Even my mouth is watering thinking about it.

Pecan pie bars
1 cup butter softened
1/2 cup sugar
1/4 teaspoon salt
2 cups flour
4 large eggs beaten
1 1/3 cups brown sugar
1 teaspoon vanilla
2 cups pecan pieces
preheat oven to 350
In a large bowl beat butter sugar and salt with an electric
mixer until creamy. Gradually add flour beating well to combine.
Press this into the bottom of a 13x9 pan. Bake for 15-18 minutes or
until crust is golden.
In a large bowl whisk together eggs, brown sugar and vanilla. Stir in pecans.
pour over baked crust. bake for 15 to 20 minutes, or until topping is set.
let cool, cut into bars.
I like to drizzle with vanilla icing.

Made these last night at 10:00...super easy (and I hope, taste good--won't know until this evening if I did it right!). Made the house smell wonderful, though, while the blustery wind and rain happend outside.

One question, Nancy and Marybeth: did you grease your pan? The recipe didn't say, and I thought the "dough" had enough butter in it, pressed into the bottom of the pyrex, but just wondered...

I didn't grease the pan but did line the pan with parchment paper. MB

They were, in fact, a hit! And, Justin did the cutting but said there was no problem getting them out of the pyrex--he didn't stack them on the platter, though, because of the sticky yummy top.

Hi Karin!!! I made them for a dinner party where a large portion of the guests (8 out of 10) were Fillipino and eat very much like they still live on the islands, even though they've been in America for a very long time. Really wonderful people, so, so dear. AND, best of all, they ate almost all of the bars, and even took some for their "morning coffee". I remember that they had a sweet tooth, because a few years back, I made my famous sweet potato pie and she asked me if I was married to an African American or some of my family was African American because she'd never tasted pie like that except in rural parts of the south. I took that as a great compliment!

Oh Jonni I am glad the bars were a hit. They were with my family and of course with me. every time I walked through the kitchen I had to cut myself another bar. I won't tell you who ate the most. LOL MB
