TATER TOT CASSEROLE (This recipe is off of the Duggar Family website) Warning! Made for a big family dinner...so very good!
2 lb ground turkey cooked, seasoned, drained 3 2lb bags tater tots 2 cans cream of mushroom soup 2 cans evaporated milk (or better yet, 2 cups of organic cream) 2 cans cream of chicken soup Brown meat & place in large cass. dish. Cover with tater tots. Mix soup & milk together. Pour over top. Bake at 350 for 1 Hour. Makes 2- 9”X13” pans

Hey Carrie :)
Here is a favorite at our home and perfect for this time of year. Serve with a loaf of crusty bread and a salad :)
Beef Lombardi
1 lb ground beef 1 (14 1/2 oz) can chopped tomatoes 1 can of Rotel 2 tsp. sugar 2 tsp. salt 1/4 tsp. pepper 1 (6 oz) can of tomato paste 1 (6 oz) bag of egg noodles 1 cup sour cream 1 cup cheddar cheese grated 1 cup parmesan cheese grated 1 cup mozzarella cheese grated
Cook hamburger meat in a large skillet, Stir in chopped tomatoes and next 5 ingredients. Cook 5 min. simmer 30 min. cook egg noodles and drain Stir egg noodles and sour cream together. Place noodle mixture in bottom of lightly greased 13x9 inch baking dish. Top with beef mixture. Sprinkle cheeses on top. Bake cover with foil at 350 for 30 minutes. Uncover and bake 5 more min.

My mom used to make this on fridays during Lent.
Tuna Casserole
1 large can tuna ( I use albacore in water) 1 can creme of mushroom soup 1 block of creme cheese 1 package of egg noodles, med width 1 small bag of potato chips
cook egg noddles, drain and dump in casserole dish, on very low heat, heat soup and creme cheese til it is melted, stirring often, when ready mix into noddles, brek up chips into small pieces, cover top of noddle/soup mix, put in 325 oven for about 20 min.s or so, until hot thru. You can make ahead and refrigerate without chips til ready to bake.

One of our family favs is a Enchilada Cassorole
2lbs.ground turkey,or beef 1 can green chilles 1 pkg corn tortillas 1 can enchilada sauce 2 cups grated cheese 2 tsp garlic powder 1 cup chopped onoins brown meat and crumble,add sauce,onions,garlic powder.in a cassarole dish sprayed with olive oil,layer corn tortillas until bottom is covered,add meat sauce,and some cheese.keep layering the tortillas and meat sauce until all tortillas are gone,then top with cheese and bake for 30 min in a 300 degree oven.
