When I was a little girl, one of my aunts use to make potato candy for Christmas. It looked similar to divinity, but the only ingredients I can remember her using was boiled potatos and powdered sugar. Does anybody have a recipie for this?

This is the recipe that Angela posted a few weeks back in another thread, hope she doesn't mind that I put it out here again. It is a great recipe, I have made it 3 times, my grandkids love it!

Potato Candy
1/2 cup boiled potatoes
1T butter
1 t salt
1 t vanilla
mash these together then
slowly start adding confectionary sugar (you will need 1 pound)mixing with a spoon. Before all the sugar is added it will get really tough at this point stop mixing with spoon and knead with your hands until all sugar is added.
Then I roll it out like a cookie sheet size and spread with peanut butter the amount is totally up to you (I think I use about 3/4 cup).Then I roll this up jellyroll style starting with one of the longer sides.Next cut the candy into small pieces and enjoy.

Potato candy is sssooooo good. My mom used to make it, unfortunately I never paid any attention to what she put in it. Thanks for the recipe, moms had the peanut butter in it too!

Do you store it in the fridge? I wonder what it woud be like if you used sweet potato or purple potatoes?

yum! this brings back childhood memories! As an adult, everyone I've mentioned "potato candy" to just looks at me like I'm crazy! I well remember helping Mom make the kind with peanut butter swirls in...may have to make some with my kids one day very soon! Thanks for bringing back this memory. :-)

...well, I tried to make this, using the above recipe. my batter has not reached the "tough" stage and I used up the whole pound of the sugar (confectionery)... maybe I wasn't clear on the 1/2 cup of boiled potato? I boiled the potatoes and mashed them and measured out the 1/2 cup.... wrong? what should I do? I put the batter in the fridge in sealed container, I hate to waste it. any ideas?
