I know that tomatillos make great fresh salsa, but is there another use for them? There is only so much fresh salsa two people can eat!
Note to self: only plant TWO tomatillo plants next year!

You could can them to use later in soups or sauces. There are several white chili recipes I have seen that call for canned tomatillos. I think you basically follow canning instructions for tomatoes. Or you could husk, wash, then freeze them, too. Or roast them then freeze for more flavor.

If it ever stops raining, I should have a lot of them ready in my garden, unless they all float away!

We've used them in soups too. Yummy!
