Hi!

Well, with harvesting winding down a bit, I decided to try my hand at the dried zucchini chips featured in the current issue of MJ magazine. Just wondering if anyone else has tried them and if so, how did they turn out? Did they get crisp like a chip or are they a little chewy? Mine are a little chew and I also put too much seasoning on them. I'm new to drying so maybe it's just a matter of doing some trial and error.

I would save them, if you don't like them and put them in soups, stews, and the like.

Some times, when I'm feeling really healthy, I'll use my dried zucchini chips with dips, but mostly they wind up in soups. I grated a bunch of zuchinni and tried that, it's handy for scrambled eggs.

Sonja, my favourite version of them so far is to soak the zuch. slices in some seasoned vinegar (I use a German brand called Salata) and then give them a very light sprinkle of sea salt. Oh my...died-and-gone-to-heaven delicious salt and vinegar chips! They are going to be some very special Christmas gifts this year.

My dehydrator is nuttin' fancy...just a plain Ronco with no fan. The chips take about a day and a half (I cut them at least 3/8" thick) and get really nice and crispy and even a little golden if you leave them prob. too long. They have such an incredible fresh, concentrated taste. Oh rats, I'm craving them now and have to stay out of them!

I think I'll have to give the salt and vinegar a try. Sounds like I needed to leave them in a little longer. They had been in there for a little more than a day. There's always next year! My zukes seem to be done for the year. Thanks for the info!

I tried to dry chips this year but they were tough.
Not sure where I went wrong so I'll try again next year.
