I came across this recipe for muffins that is wonderful. I was a little hesitant to try it because it's made with tofu!! There are no eggs or milk in this recipe but I assure you they are wonderful. I have made them with cranberries like the recipe says but I've also made them with blueberries and can't rave enough about them. I hope you will try them and like them too!!

MUFFINS

1-1/2 cups unbleached four
1/2 cup whole wheat pastry four
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1-1/4 cups Mori-Nu baking blend (see recipe below)
3 Tbs. canola oil (I used olive oil and it was fine)
1/4 cup apple sauce
1/2 cup unrefined cane sugar
1 Tbs. lemon rind, finely grated
1 Tbs. lemon juice
1-1/2 cups fresh or frozen cranberries

ORANGE PECAN TOPPING

3 Tbs. unrefined cane sugar
1 tsp. orange rind zest
1/4 tsp. cinnamon
1 Tbs. finely chopped pecans
1/2 tsp. vanilla extract
Mix all ingredients together in a small bowl.

MORI-NU BAKING BLEND

1 pkg. Mori-Nu silken extra firm tofu
1 cup water
2 Tbs. lemon juice or white vinegar
Blend well in blender. Store covered in fridge. keeps for 1 week. (1 cup baking blend=1 cup liquid ingredients) Can replace buttermilk, soymilk, or dairy milk in baking recipes.

Preheat oven to 350. Sift flours, baking soda &powder and salt into large bowl. In another bowl whisk together the next six ingredients. Make a well in middle of flour mixture and add wet ingredients. Mix just until blended or batter will be tough. Fold in cranberries. Fill muffin tin 2/3 full and sprinkle with orange pecan topping. Bake 20-30 minutes until golden and cake tester comes out clean. Cool for 5 minutes then enjoy!!

These muffins are 150 calories and 4.2 grams fat per muffin!!

I was interested by this recipe and its use of tofu. I, however, do not like to buy tofu from grocery stores and prefer to purchase tofu at an asian store. So, what I'd like to know is, 1 pkg of Mori-Nu tofu weighs how much? And what is extra firm tofu like? (I eat tofu all the time, yet this confuses me!) And what is the consistency of the baking blend?

Oh, and is the topping necessary? I'm horribly allergic to pecans...

I've already taken the trash out with the packaging so next time I'm at the store I will have to check the weight for you. As far as the texture, it comes apart very easy but slid out of the box all as one piece. I really don't know how else to describe it as this is the first time I've had tofu so I don't know how to compare to the other types. The baking blend has a consistency of pancake or waffle batter. The topping is completely optional and the first time I made it I didn't have any pecans and it turned out just fine.

Ok, I just looked on the website for Mori-Nu and it says one serving is 3 oz. and there are approx 4 servings per package. So approx 12 oz. package. Hope that helps.

The Mori-Nu Baking Blend would be very helpful for people who are lactose intolerant. I admit now that the lactose free milk is so available, I just use that in my cooking but there was a time when it was hard to find and my choices were much more limited. Of course the lactose free milk is expensive so it would be interesting to see how the two alternatives compare in price. One thing I would say is shop around for your lactose free milk if you need it. I usually buy it by the gallon. It will last forever in the refrigerator - much much longer then regular milk so even though it's just me I use a gallon easily. I never buy groceries at Walmart but I was close to being out of milk and was going to pick up a gallon there. They didn't have the gallons and buying two half gallons there was vastly more expensive then a gallon at my regular grocers so check around on it.
