It is finally apple season. What is your favorite apple recipe? I do apple butter, canned apples to fry and/or make pie with, and of course apple sauce. I would love to hear what you do.

The boyfriend made a desert the other day with apples, peaches, chocolate chips and applesauce. It was wonderful!! Trying to convince him to make it again, but peach season is rapidly closing here. I'm canning the last tonight.

I do applesauce, apple butter, apple juice, apple pie filling and an apple tomato chutney that turned out good on eggs.

Don't forget to try drying some. You can do them plain or sprinkle a little cinnamon sugar on them.

I just found a recipe for apple bread, I hope to try it today! If you want the recipe let me know. If anyone has a good recipe for baked apples Id love to try one or two. I ad one this weekend that was red it was delish sure wish I knew how they made them. Blessings,Karen

Good ole' applesauce with cinnamon and a bit of cloves. We only add a bit of brown sugar if the apples are the more tart ones.

APPLE CRISP!!!!!! Peeled and sliced apples in a baking pan. Brown sugar, oatmeal, a bit of flour, cinnamon and cloves, cut in butter with a pastry cutter, add chopped walnuts. Bake until top is crisp . . . serve with vanilla ice cream . . . YUUUUUMMM-MMMM-MMMM!!!!! I even eat it for breakfast.

you bet Shirley! Apple Bread
Beat 3/4 cup of veggie oil with 1 cup of white or brown sugar and 2 eggs.Stir in 1 1/2 cups of chopped, unpeeled apples, 1/4 cup of chopped walnuts,and 1 Tbs of grated lemon zest, if you like. Sift together 1 1/2 cup of self rising flour, 1 tsp of cinnamon, 1/2 tsp of nutmeg. Add to apple mixture. Do not overmix. Pour in a 9x5 loaf pan. Bake at 350 degrees for 55-60 min. ( I sprayed my pan with canola oil) Hope you enjoy! Blessings,Karen

I dont really know Shirley I just recently found the receipe and made a bunch for my freezer too, but I can't see why it wouldn't I do my banana bread the same way and it comes out of the freezer just fine. Blessings,Karen

I once saw a cooking show where they did apples wrapped in dough (spices placed in the core hole). I think they said you could freeze them and bake them later. Has anyone done that?

This morning for breakfast I made an Egg Puff with Farmgirl Mix and apples but did change the recipe to cut back the calories a little and eliminate the white sugar. I will try this again in the future with all-eggbeaters to see if the guys notice the taste difference. They are pretty fussy about their eggs but I have to cut back fat.

Molly's Apple Egg Puff

4 T Smart Balance (instead of butter)
5 eggs
1 1/4 cups Egg Beaters
1/2 cup nonfat milk
2 tsp. almond extract
2 tablespoons agave syrup
1/2 tsp. sea salt
1/2 cup Farmgirl Budget Mix
3 cups peeled, diced apples
1/2 tsp. Saigon cinnamon

I mostly followed MaryJane's directions (from the Farm Kitchen issue)-family size. (cast iron skillet, oven preheated to 400 degrees and bake 35 minutes) One change, I sauteed the apples with the cinnamon in the 'butter' to pre-cook them a little. We ate it with light syrup (the guys) and I had mine with sugar free syrup. What a delicious special Sunday breakfast. (and it didn't make me dump for those who deal with gastric bypass issues) Thank you MaryJane!

Karen, you just jogged a fun memory for me. Almost every autumn the kids will ask me to make my mom's Red Hat Apples. The name is because mom hand-wrote the recipe card for me and her 'o' looks like an 'a' so we just gave it a new name. But basically it is more a method than a recipe.

We do ours in the microwave but it is fine stove-top or oven too. Peel, core and slice the baking apples of your choice and place in a baking dish with a good sprinkle of cinnamon red hots (also called Cinnamon Imperials). Add a tablespoon or two of water to help the apples release their juices, cover and bake until the apples are tender and have melted the red hots. So easy, so bright and pretty on the table.

Try this one!
Chunky Apple Cake bake 350 for 45"
BLEND:
1/2 c butter, 2 c sugar, 2 lg eggs, 1 tsp vanilla
COMBINE:
2c flour, 1 tsp baking soda, 1 tsp salt, 2 tsp cinnamon
MIX wet and dry together.

STIR IN:
4 granny smith apples; peeled/diced
1 c chopped walnuts

PRESS into greased square pan and bake.

NOTE: It will be VERY thick and chunky. At least mine was. It was more like apples with a thick batter in between. BUT it turned out great and very moist.

Frost with:
Cream Cheese Frosting
BEAT together.
8oz cream cheese (softened), 3 T butter (softened),
1 1/2c powdered sugar, 1/8 tsp salt, 1 tsp vanilla

Shirley- I posted this recipe on my blog last January and I thought you might like it. I can't wait for colder weather so that I can make it again!

Cranberry-Apple Oatmeal

1/2 cup oats- quick or old-fashioned
1 cup water, plus more for adding as the oatmeal cooks
2 T dark brown sugar
1 T butter
1/4 tsp grated nutmeg
1/2 tsp ground cinnamon
pinch of salt
1 apple, cored and cubed. You don't have to peel it, I don't. But if you want to, go ahead.
Scant 1/4 cup dried, sweetened cranberries
Now, don't think I'm odd, but I also add just a tidge of black pepper- a shake or two. Just because.
Add water, butter, brown sugar and oatmeal in a large skillet. Turn heat to medium and begin stirring together. As oatmeal thickens, add spices and salt and continue stirring, adding water, 1/4 cup at a time, as it becomes absorbed into oatmeal. It is quite similar to making risotto. Add apple chunks and cranberries and continue stirring and adding water (up to 1 cup or so) until the apples are soft but not mushy. This should take about ten - twelve minutes. Done! The result is a creamy, flavorful oatmeal with the snap of tart apple bits and cranberries.
