I need your help! I have this memory of the peach cobbler made, by hand, by the lunch lady when I was in school. Now, I'm telling on myself here but, that was more than 30 years ago. That lady cooked the most incredible peach cobbler from the time I started 1st grade until I graduated. And I have never found a recipe to match it. I cannot even count how many I have tried. It's the crust that made it so good. There were like these wonderful dumplings in the peaches that you found occasionally and the top crust was almost like pie crust but more flaky and almost crisp in some places. This had to be an old southern recipe but the lunch lady has since died and no one knows her recipe. If anyone thinks they have a similar one please let me know. I can tell you the crust is not a cake or biscuit mix. I would love to hear from you.

Vitoria, I have one peach cobbler that my hubby just loves. Here it goes. 8 cups slied fresh peaches, 2 cups sugar, 2-4 TB flour, 1/2 tsp.nutmeg, 1 tsp vanilla, 1/3 cup butter. Combine first 4 ingredients in a Dutch oven; set aside until syrup forms. Bring peach mixture to a boil; reduce heat to low, and cook 10 min. or until tender. Remove from heat; add butter and vanilla, stirring until butter melts. Pastry for a double-crust pie: 2 cups flour, 1tsp salt, 2/3 cup plus 2 TBSP shorting,4-5 TBSP cold water Combine flour and salt; cut in shorting with pastry blender until mixture resembles coarse meal. Sprinkle ice water one TB at a time. Shape into balls and chill about 30 min. Roll half pastry to 1/8 thick on lightly floured surface. Cut into an 8" square. Spoon half of peaches into a lightly greased 8" square pan; top with pastry square. Bake at 475 for 12 min. or until lightly browned. Spoon remaining peaches over baked square. Roll remaining pastry cut into strips of 1-in. arrange in lattice design over peaches. Bake another 15 -18 min or until browned. Serve with vanilla icecream if desired. Laurie

Guess what I'll be cooking on my next day off. Probably Monday. I'll let you know if this is the one. If it is I'll love you for life. I started thinking maybe I just thought the cobbler was that good but even my sisters remember it and to my surprise I found out a couple of weeks ago that 2 of my sisters have been trying to recreate the recipe for many years.

I am so glad you asked this question. My grandma used to make a cobbler like that also but she passed when I was only 10 and no one knew the recipe either. I am going to try this one also because it really sounds close enough to be it. Her was with crust also not just big dumplings on top. Thanks Laurie!!

I'm kind of amused here. Seems like Texas has that secret dream peach cobbler but nobody has the recipe. Laura, I'll let you know Tuesday if this has ended my quest.

Here is a recipe from my friend who comes from Pennsylvania. They call it cake but it's between two crust like a cobbler. It's different from anything I've ever had here but really delicous! Peach Cake 1 c butter 4 T sugar 3 c flour 1 t baking powder 1/2 t salt mix and add 1 egg and 1/2 c water. Work until dough forms. Divide into 2 balls, one slightly larger for bottom crust. Roll between two sheets of wax paper and place in a 9 x 13 pan. Slice 10 peaches (or apples) into the curst then sprinkle with: 3 T flour 1 c sugar 1/2 t cinnamon dot with butter then cover with top crust. Bake 350 for 1 hour. Frost while warm with: 2 c powdered sugar 1 t butter 4 t warm water
