This is a very easy recipe for apple butter.

3 quarts peeled apples sliced thin
1/2 cup water
Place in crock pot on high all day then add:
2 1/2 cups sugar
1/2 tsp ground clove
2 tsp ground cinnamon
Cook on low for about 4 hours
Stir, place in hot jars and seal.
Note: If apples are still too chunky, use mixer to break it down into a nice texture. Make sure it's still bubbling when you put it in your jars, can and seal.

Bertha, I don't know if the Splenda would make it any different or not. I've never tried it that way, but should cook up a batch for my parents since they are both diabetic. If I get a chance to try it, I'll let you know.

Thanks for sharing - I just checked with our local orchard today and the apples will be ready Labor Day. I always purchase a bushel or two to make applesauce and apple butter, as well as pie filling, and slices for fried apples.

Sue: I love the recipe for a different reason. Every year for many years I made apple butter in an old copper kettle over an open fire. Stirred it with an apple butter paddle, a long stick with a paddle on the end with a hole in the middle. It took hours. But, by golly, it was the best apple butter I ever had. Can't wait to try yours. Thanks

A local organization has been making apple butter in kettles over fires for a long time, and they always make a batch without any seasonings. You could make some without any sugar, and add Splenda to individual servings.

So....after it's cooked and ready to go...you heat the jars in a hot water bath (and lids) and then spoon the hot apple butter into the hot jars and put the lid on tight...right?

Then, do you have to put them BACK into the water bath to set those lids? And can some wonderful apple-guru-canning-goddess post how to make a pie filling to can??? And maybe an applesauce too???

I mean..it's a little embarrassing cause I live in MI (apple central) but I've never canned apples before? My canning repertoire is somewhat limited to tomatoes and a little salsa last year...Oh...and I tried grape jelly once too. But I crave a few "rows" of canned something on my shelves to pull out mid-winter to remind me of the summer....I'm throwing blueberries into the freezer but I'd really like to see those canning jars full of color on my shelves! Thanks. T

Thanks, Sue...I too will need a little clarification on the waterbath canning time. I have to be totally detailed or I worry myself to death about ruining things!

This will be so nice for me since I have so little time (a 5.5 month old will do that, I understand!)...

how many pints does this usually make.

You should probably process the jars of apple butter for about 1o - 15 minutes for pints.
There is a really good apple pie filling recipe in one of the past issues of MJF. Don't remember which one, though.

I have to be totally honest with you. I have never had the chance to can this. I make it and my kids are waiting to take their jar home and eat it. I usually get 5-6 jars out of a batch, depending on how much they eat while they are helping me. I make sure I have fresh biscuits coming out of the oven when this is ready and it disappears quickly.

I Make Apple Butter every year, some with sugar and some with Splenda.
My neighbor is diabetic, so I make his with the Splenda and he loves it.

As far as the waterbath time, usually in any cookbook on canning they have the time table for apples listed. . not sure off the top of my head but 15 minutes comes to mind. . . please double check in your cookbook though.

The apple pie filling recipe sounds wonderful! Has anyone got a good one for canning???? I too would love to make a few jars for the winter.
Our wild apples are almost ready to pick any day now. . . I know, it seems early, however, our trees are already turning!

I made this using apples with peels and just using my regular apple slicer that I use for slicing apples for my son. It turned out really yummy. I also cooked it for several hours before hitting the batch with my immersion blender. You cant tell the apple peels are there. Next time I might try popping the core in as well.

Ok...so I sliced/peeled and put apples into the crockpot and they "blooped" out of the pot onto the counter....but I've kept going and added my sugar/spices and we are now in the home stretch of cooking on low for a few hours. Already it's dark brown and spicey smelling. I don't think I'll have enough to "can" after the apples tried to make their get-away but enough to share with a neighbor and make a dandy back-to-school gift for the secretary in my office...(she's not mine mind you but she sure takes care of me like she is and I appreciate her in oh so many ways!!!) I may even bake some bread today too!

So....I took the peels and covered with water and cooked them down on the stove. Now I am simmering peels, sugar, spice to make a jelly of some sort. I've strained through cheesecloth twice now and it's still dark but relatively clear... This will make jelly right?
