That's the way I learned to make biscuits. It's only the last year or so that I started rolling them out and cutting them. I just roll a pinch of dough between my hands, with lots of flour on them to keep the dough from sticking, and pat them in close to each other in the baking pan. |

Same here. I think I'm just too lazy to roll them out. But I make mine the same way Amie C does.

I mostly do it that way too...out of pure laziness and the fact that I learned that way. I do love the look of the rolled and cut ones (never met a bisquit I didn't like) but I tend to do drop bisquits or hand formed ones.

I also do all my mixing by hand, and do drop biscuits, no rolling out and cutting, takes too much time, and my time is precious

My dear deceased grandmother had one of those ; well 2 ; but one was really big ! dark brown mixing bowls with the ridges on them the really old ones. She took a walnut size or bigger of dough. She put flour on her hands and patted them each in a perfect round biscuit they were so good. She was one for cooking fast one funny thing about her is When she got her "electric stove" she wouldn't fix any thing "messy" in her oven You know like sticky googey casseroles. she thought it was only for baking sutff like bread, pies, cakes etc lol hugs sheila

I mix mine by hand. I use lard for the shortening, roll them out and cut them with a metal vegetable can lidless on both ends to serve as a cutter. Something about the can makes them perfect. I've been using the same can for years as they don't make veggie cans that open on both ends anymore. I have a recipe for cornmeal biscuits that goes back to the Civil War. Love 'em with chili....must be suppertime, I'm hungry....

I use a pastry blender to blend shorting with dry ingredents. Put lots of flour on a flour board and pat the dough , then use a cutter. Laurie

I make drop biscuits. Simple kneeding with hands and just plop onto a cookie sheet.
Learned from my dad
Don't have the patience to roll and cut when it all goes to the same place anyway....althought uniform round biscuits hold the gravy better! |

Alee. I love biscuits; though being Diabetic; I can't have them often during the week I love homemade; but been buying the Pillsbury dough boy's biscuits. I use to make home made loaf breads, cake and cookies every week when my son was little I use to love to bake. hugs sheila
