Hi girls!
Has anyone canned chicken breast or pork tenderloin? I'm thinking about adding these to our food storage.
I have done a little research online, but there seems to be a lot of conflicting opinions about whether the meat should be raw or precooked before canning. What do you think? Have you tried both? Which do you prefer?

I have always pre-cooked, I figured that the times I would be using canned meat the most, I would not want to , or be able to cook, or when we go hunting or fishing, the less cooking I have to do the better.

I do chicken, beef and pork in raw chunks. Once it's processed for 75 minutes, it's cooked. Just open the bottle and break up the pieces for enchiladas, tacos, salad toppers, burritos, etc. It's similar to canned tuna in texture. So easy to use; I make something with bottled meat at least every other day. Easy for kids to make their own 'meals', too, and you don't have to worry about them at the stove cooking. HTH!

I can it all the time. I have done both..but do pre cooked more often since it doesn't shrink in the jars as much...so you can fill the jars better. If you have alot to can up quickly though, it IS quicker to do raw. Make sure all the peices are the same size. I do 90 min processing. (quart jars) I am at high altitude so I have to process at a higher rate...13 pounds instead of the usual 10 pounds pressure. So handy to have on hand!! I can up taco meat and meatballs too.

Hum, I've only done tuna. I don't know why I don't can our venison, I guess I just haven't. But I always do my tuna raw. Like Molly said, after it spends that much time in the canner (tuna is a hour and a half!) it's pretty well cooked! :)

Something else I like to can is pozole,(Mexican soup) chilli and vegetable beef soup. This way on days I dont have time to cook, just open a jar heat it up and eat it up. So handy, and so wonderful. Also, I can my own chilli tomatoes which I use for soups and other recipes. I used to buy canned chilli tomatoes until I figured out all the tastes that I liked and now make my own. They are wonderful. I am also thinking about canning potato soup. Another favorite. Meat does can very well. Crumbled up hamburger pre cooked is good as well as the other ladies have said, chicken, venison, beef. I had a friend who used to make her own breakfast sausage and cook it into patties, then can them in jars. They were delicious. Buen Provecho! Happy eating! Sheri

I can't wait to try canning meat. I think, I'm going to wait until the pavement isn't melting before I start heating up my house even more.

I can venison and it is like Bunker Hill Beef and Gravy that you can get in the stores....only better! My sister in law cans pork. I let the pressure canner cook the meat for me. Let me know if you want the recipe.
