OK, girls, every year I plant too many zucchini, and swear "Never again" but I only planted 20 seeds this year, I swear! Actually only 12 zucchini seeds, I have 5 hills of four plants each, but one hill is yellow squash and the other is delicata squash. The harvest has started to come in, and it is going to be a bountiful one! I am already up to my ears in squash.

So, I am looking for something different and unusual! No zucchini bread, chocolate cake, or saute with spaghetti sauce or pasta, or casserole with corn or carrots or chicken, or ratatouille or a variation. I have about a million of those recipes.

Anyone have something out of the ordinary? See my blog for pictures of the first prize - a vintage table runner with old creamer and sugar bowls. The second prize is a vintage apron.

You have to try the recipe in the last MJF magazine. Zucchini chips ... yum. I know this won't include me in your drawing but it is a good recipe. Although I do have one for a relish that is good if you want it.

I have a zucchine marmalade recipe that is ... different. Actually it's pretty good once you get over the fact that it's sweet zucchini!

Have you dried Mock Pineapple Chunks. They are a great substitute in stir-fry.

Roxy, I'm sure you're quite smart enough to post a comment, it might not be obvious if you haven't done it before!

Go to the bottom of the contest post, and you will see a highlighted "0 comments" (Hopefully the number will change soon!) and just click on it. It should bring up another screen where you type your recipe in the box. Then when you are finished, choose an identity (if you choose anonymous, please be sure to leave some identifying in formation in your post so I can contact you if you win!) and click on "Publish your comment". It won't show up right away, because I approve all the comments before allowing to show up on my blog so that I don't get spam or bad stuff, but as soon as I approve it, it will show up on the blog.

Here is the Mock Pineapple Chunk recipe: 1 (48 oz) can unsweetened pineapple juice, 1 gal coarsely chopped zucchini, 3 c sugar, 1 1/2 c lemon juice, food coloring (optional). Combine pineapple juice, zucchini, sugar and lemon juice; simmer 20 minutes. If desired, add a few drops of food coloring. Pack in pint jars; use 10 pounds pressure for 30 minutes. I hope you enjoy using this.

Couldn't get the recipe to post on your blog so here it is.
Zucchini pickle relish

Enough zucchini along with 3 cucumbers to total 10 cups grated.
2 green and 2 red peppers grated. 5 tablespoons salt.

Mix and let set for 1 hour. Put in a strainer and drain. Rinse with cold water and let drain again completely.

Add 5 cups sugar, 2 1/2 cups vinegar, 2 tsp. celery seed, 1 Tbsp. mustard seed, 1 tsp. tumeric, and 2 Tbsp. cornstarch ( when adding cornstarch mix into a little vinegar then add) and bring to a boil, cook for 30 minutes.

Can into hot pint jars and waterbath for 20 minutes.

I have a recipe for zucchini-cinnamon squares. Fooled the family forever with that one. They all thought it was apple crisp! I will dig out the recipe and try posting on your blog in the morning. My kitchen is a shambles at the moment - I'm remodeling ;)

My favorite thing to do is to shred it, and cook in a saucepan with a little onion, corn, cilantro, and lots of butter. Not the healthiest, but mmm

My favorite is zuc patties. Shred a few with a small onion, salt, pepper, a squosh of sugar, and egg and some flour to make a nice batter. Get your skillet nice and hot with a little oil and fry them til nice and golden and crispy. Man, they are so good. The grands like them, too. You can also use squash or mix the two together.

just added squash-stuffed chicken and zucchini enchiladas to your contest! i havn't tried either of these myself yet (though i have made the chili cream sauce that goes on top of the enchiladas... it was delicious!) but i am excited to try them myself when my zucchini harvest comes through! but i thought i'd post them because they were both different and sound great! let me know if you try them and how you like them!

I left a Garden Kosher Dill Pickle Recipe on your blog. It uses zucchini, yellow crooked neck squash, pickle cucumbers, green beans, onions, garlic and cayenne pepper. I enjoyed looking through all the other recipe. I am so glad that there are other ways to use it. I have plenty on my farm also! I am new at MJC and I am really enjoying it.

Last night I made a zucchini calzone. mmm. I know your contest is over, but if you are still looking for something different to do with them...
Make pizza dough. Divide into 6-8 balls, roll each out into a thin disk.
Saute' zucchini, onion, oregano, garlic. When tender, toss in a handful of chopped fresh basil and tomato.
Place filling on one half of disk, top with some shredded cheese/cottage cheese/your favorite cheese.
Stretch the other half over the top to cover, crimp edges.
Bake on greased sheet 15 min. at 425.
