Has anyone made crackers from scratch? I have tried some, but I can't seem to get them crisp enough. Does anyone have any tips? |

I haven't, but I've always wanted do. In the "Baking" (and I won't get that title right) issue of MJF mag a few years back, she had a recipe for a couple of different crackers, and I might be mistaken, but I thought it used the budget mix. I always wanted to try them, but never got around to it. There's a LOT of recipes like that for me!!!

I haven't made any crackers but when I make biscotti I turn the oven off and leave the biscotti in there for another hour to dry it out. Maybe that might work for crackers?

We made some at Libbies a couple months ago...(Libbie, Pearlsnjeans and me) and they turned out great. We used the recipe from the MJF baking issue. We did three different "toppings" on them...all were wonderful. I really recomend that recipe!

I'm new to mjf, and haven't ssen the baking issue. Is it made with four or with mj baking mix. Is is possible to post the recipe. |

It was made with the baking mix. And it is really good. Gosh..I dont' know...IS it okay to post that recipe??? I will happily post it if someone from the farm says it is okay to do so.

I'm glad to know they were good, Jenny...they looked good! I was going to make mine (daydream!) with all sorts of seeds (like poppy, sesame, etc...) for a "birdseed" effect, but as I said, never got around to it.
If the farm let's you, I know these gals will appreciate the recipe!

Thanks Jenny. I understand about the posting. I just don't have any mjf resources available to me at the moment. At least I know there is a good recipe out there. Is the baking issue one of the regular bi-monthy magazines? |

Yes...it was last summer if I remember right. A REALLY good one for sure...heck..maybe it was longer ago..but it IS one of the regular ones.

I make homemade crackers quite often. The number one thing you need to be sure of, roll it out thin. If it is to thick it will not be crisp the way you want it. Took me a few tries to get the hang of it. The dough is like a big elastic. . so it takes a little work to get it truly rolled out thin. I use my favorite cookie cutters so we have unusual looking crackers!! I do them by season. . . so fun when hunting season starts. . make lots of animal crackers!

What a cute idea. I have some tiny cutters...for canapes and hors deovres I think..but hardly ever use them..other than the leave one to decorate pie crusts now and then...good use for them. When we made them we cut them with a pizza cutter..made rectangles.

I've made cheese crackers before and yes roll it out very thin and bake at 375-400 degrees depending on oven. Laurie
