Hi girls,

I am, in search of tried and true Gooseberry recipes. I have never had them before other than in purchased jam or preserves so I'm not sure what to do with them :)

In my BETTER homes and garden cookbook they have a recipe for gooseberry mereinge pie. Its actually quite easy to
make. Make one layer of crust, and brown it in the oven. Cook the gooseberries (2 cups) and a half C of water
on the stovetop til the berries kind of pop open, then add a cup of sugar (or honey) with 2 T of corn starch mixed in it
to the berries and cook it on medium until it thickens. When its thick, pour it in your browned pie shell. Then make
the mereinge and put it on top of the pie (after pie cooled) then stick it in the oven for about 10-20 minutes just until the
mereinge starts to turn brown. Its so good.
