I need a recipe that is light, trying to watch the calories, but I want to saute the zuchinni. If anyone has any recipes they would like to share I would appreciate them. I also wanted to know if you can freeze zuchinni and if so how do I go about it. Blessings,Karen

lightly steam, toss with olive oil and lightly sprinkle with your favorite seasoning. Roast on the barby in foil with olive oil and seasoning. Yes you can freeze, I lightly blanch, put in freezer bags and freeze. When I do this, each bag is measured to 2 cup amounts, cause I shred some, slice some and spear some, for differant recipes.

I love sauteed Zuchinni...I usually use olive oil and then season with fresh pressed garlic and seasoned pepper. Yum! I am actually really really anxious for my zuchinni to ripen...it will be awhile..especially with the cool June weather we have had..things are not growing as quickly as they normally would. I shred and freeze zuchinni to use in breads and stuff..it freezes nicely.

Several years ago, I found this neat way to cook zucchini in of all places a Suzanne Somers cookbook. She recommended taking a larger zucchini (great for when you loose one in the garden and it gets huge!) and peeling the flesh in strips with a potatoe peeler. When you get to the seeded core, stop peeling. Then you can saute with olive oil and season. I use these zucchini "noodles" instead of pasta. This is sooooo good mixed with shreaded, melted cheese.

I cut medium succhini in quarters, addd a little olive oil just to keep from sticking, perhaps a bit of margerine and make foil packet to grill.
Beats heating up the kitchen
Work very well for out of the garden potatoes too |

Mmm the noodle idea sounds so good!
I've heard of making chips out of them, but haven't done it (yet) myself. Baked, not fried. Mine are just getting big enough I'm watching for blossoms. Any day...I hope. Hope your crop goes gangbusters too! I'd love to have so many I get to play "zucchini fairy" and leave presents on doorsteps this summer like someone has done to me before. Gardener's paybacks are yummy!

I like to sautee my zucchni with some sliced onion in olive oil and slat and pepper. When I freeze mine I blanch, then drop into ice water to stop cooking. Laurie

Michelle, I agree gardeners paybacks are delish! And what fun to be a fairy. I am hoping I can do some swaping with some fellow gardeners and trade for things I didnt get to plant. Baked chips sound awesome will have to try that. Thanks for all the tips ladies!
