I just thought I would share this recipe. It's something that I make every year for my honey when the raspberries are in season. I hope you all enjoy it :)

Fresh Raspberry Pie

5 cups fresh raspberries, divided
1/3-cup water
¾ cup sugar
7-½ teaspoons cornstarch or arrowroot powder
dash of salt
9 inch pastry shell, baked

In a saucepan, crush 1 cup of berries. Add water; simmer for 3 minutes. Strain, reserving juice; discard pulp and seeds. Add enough water to juice to measure 1 cup liquid. In a saucepan, combine sugar, cornstarch , and salt. Slowly stir in raspberry liquid. Bring to a boil; cook and stir 2 minutes or until thickened. Remove from heat and cool slightly.
Place remaining raspberries in pastry shell; pour glaze over top. Refrigerate for 2-3 hours or until set. Serve with whipped cream if desired. Yield: 6-8 servings.

That sounds real good. I love Raspberries. I just fresh picked Strawberries and made the boys some shortcake--om southern biscuits. Another yum. MB

Oh my Sharon...guess what...I just came home with a flat of fresh raspberries! I think there will be plenty to make THIS recipe (THANKS!!!) and also some jam later. Yum!!

Boy does that sound good! I am going to try this out. It sounds like the delicious raspberry pie they make up in WI at the Norske Nook in Osseo. Thanks for sharing!

I don't think so. I think the berries would become too juicy after thawing. I wish we could freeze it!

I am going to make the same glaze and make some raspberry napolians for dessert for fathers day tomorrow. HAD to go get more berries today. I froze most of yesterday's berries for jam making later...but had to have more of this raspberry goodness...yum!

My raspberries are done for the first part of the season. When it cools off in September (oh yeah) there will be another crop. I will try it then.
