Now that thishot and humid weather is here my appetite startsto change. I crave meals that are a little lighter don't take as much effort yet are tasty and nutricious. BLTs are one of favorite summer meals. What are yours?

I was just thinking today that I needed to start dragging out my summer menu's. BLT's are a late summer meal for us - only eat them when the T's are ripe from the garden.
Salads, lettuce & pasta. Perhaps some wraps... I'm looking for some new ideas. I'll be watching this thread for sure!

MMM I love BLTs. I like to make big chopped salads when all the greens are in season, with fresh peapods. Also I have a plethora of zucchini recipes and even the zucchini soup is good on a hot day. I'm looking for new recipes for those days when it is just tooo hot to cook. Amy Grace

Pesto and penne with sauteed chicken breast in white wine and Olive oil.
Bowtie pasta salad with grilled asparagus, heirloom cherry tomatoes (halved), red and yellow julienned peppers and a vinagrette.
Curry chicken salad (grapes, celery and onion) over mixed greens with a light balsamic dressing.
My husband's new concoction: homemade pizza bread with proscuitto, onion, pears, brie (or goat cheese) drizzled with honey.

Those tomato sandwiches (on Mary Jane sourdough bread!) can't be beat. Some folks flavor their tomato slices with onion - but you don't put the onion on the sandwich. Pizza on the grill is so good - onion, pear & gorgonzola (any cheese like that) and mozzarella is so good. Use a little olive oil instead of tomato sauce. Last night, it was so hot, I just made some angel hair spaghetti and had it with shredded parmesan and homemade butter. Mom likes cornbread crumbled in buttermilk for a light super. My favorite light supper is an egg salad sandwich (on sourdough of course!).

You gals may think me a little crazy but I love bread, butter, and green onion sandwiches!We also eat alot of tomato and mayo sandwiches. Cottage cheese and maters is always on the menu around here as well.
I have been experimenting with pizzas on the grill.I can't wait for more veggies to be ready in the garden to throw on top of these babies...yum!

Tell me, Pam (WV) and umm...Pam (NC) about pizza on the grill. Do you make your dough, use store bought mix, or already premade crust like a Boboli or something like that? I'm thinking the pizza my dh makes could be magnificent on the grill!!!

Im not Pam but I always make my own pizza dough! There is an excellent recipe in the Barbara Kingsolver book Animal, Vegetable, Miracle. Here is a link to it online http://www.animalvegetablemiracle.com/Pizza.pdf
Of Course if you are doing the MaryJanes Sourdough thing, I made a Pizza Dough recipe for that. Here is the link for that page http://www.maryjanesfarm.com/snitz/topic.asp?TOPIC_ID=28238&whichpage=32 You will need to scroll down about half way.
When cooking pizza on the grill it is important to keep your ingredients light and fresh. A pound of meat and a pound of cheese will never cook through! Also because it is quick cooking I often lightly precook things like onions and pepper just to get rid of the "raw" taste of them.
To cook pizza on the grill - Brush the grates of the grill with a little bit of oil.
Over very high heat cook you pizza dough for just a minute or two on one side. Just until the dough is slightly crisp on the bottom and you start to see grill marks.
Flip your dough and move to the cool side of the grill. (If you use gas just leave one side of the burners off, for charcoal - stack more coals on one side leaving the other side cooler.)
IMMEDIATLY - add your toppings. Prepwork is important here. A few veggies and some fresh mozzerella are great. Fruit and goat cheese pair well together. If you like stronger cheeses like gorgonzolas, blues etc. they also work well paired with onions, olives or sturdy fruits like pears.
Make a foil tent over your pizza. This will help direct heat to melt the cheeses. Keep an eye on the bottom and turn the pizza as necessary. In just a few minutes it will be done!
The great thing is you can cut the dough small and everyone can create their own mimi-pizza to their tastes.

Excellent, thanks, Julie! My dh is REALLY into making pizzas right now, and we just bought a new grill (charcoal, though) so I'm anxious to get out of the hot kitchen!

Watch Bobby Flay on the food network. He grills EVERYTHING! I have learned a lot from him. And I am lucky to have a husband that lets me experiment in the kitchen! If he hates what I make he gets to go to McDonalds (which I refuse to eat and is a special treat for him) so it's all good!
