I dug and roasted roots this weekend for the first time. Last night I boiled the roasted roots to make a hot drink. It looked like a weak tea, but yum- it tasted so rich! Not like coffee exactly, but almost like cocoa. I can't describe it, but it was so surprisingly tasty! I think I've found my new bedtime drink!

They were dark on the outside, gray on the inside. After I posted, I saw your post from last week. I just cut my roots into chunks before roasting and then boiled them on the stove like tea. I think next time I'll chop them up before roasting and then grind it like coffee. Did you say yours was dark? It's nice to know that there are different ways to do it and they all taste good!

Mary- Yes I chopped mine up in my blender so they were pretty small when I roasted them. It was a "darker roast" so to speak. Mine had a bit more of a bitter flavor- a little more like coffe but still that indescribable smooth rich flavor. I like it! :D
