Last weekend I made such great bread! I usually use half white flour and half wheat flour and add wheat germ and oat bran. It doesn't rise very well because of all the wheatyness. This time, I used all white flour and added a bunch of flax seeds and some sesame seeds. It turned out beautifully! It is a great golden color and the loaves are HUGE! I really love how it turned out!!

I LOVE baking bread from scratch, it takes HOURS though because I let it rise twice.

If you add some "gluten Flour" to the W/W flour, it will rise great........
Wheat doesnt have as much gluten in it as White, that is why your white is beautiful without Wheat.
I can give you my WW bread recipe, that always turns out Great, not heavy, just like white, if you'd like............
I probably wont remember to check back, so please privately email me......

I have been putting in flax every week when I make Mary Jane's Sourdough and I love it! It looks beautiful and is so good for you. The sesame/flax combo sounds delish.

May I suggest that if you are using flax that you crack the seeds or use meal instead of whole seeds? The seeds tend to just ummm... pass through the system unless the seed coat is breached in some way.
