I made some REALLY great chicken sausage today! I'm a little grossed out by the sausage casings, but I got past that :)
We buy yummy chicken sausage from Trader Joe's sometimes and I wanted to try to make some that was somewhat like that--
I used a recipe that was in Backwoods Home magazine for turkey sausage and used the meat from one chicken (since we had a bunch in the freezer)--it also uses bulgur wheat, which I wasn't sure what it was, but found it in the Amish store; I also used about an inch of ginger, grated, and a cup of dried apricots, cut up. YUMMMMM! The whole family loved it! Next time I might not use quite as much pepper, but I was pretty impressed!
And a pretty inexpensive sausage, too!
Oh, we don't have a sausage maker though, but I do have a grinder attachment for my Kitchenaid, which is how I ground up the chicken, then after it was all mixed up, I used a jerky shooter type thing which my husband uses to make jerky--worked super! |
