Hi Farmgirls - first I looked to see if I could find a thread on this topic, but with 161 pages in the Farm Kitchen, I gave up quick, so I apologize if this topic already exists - if so, someone please point me in the right direction. Both my hubby and I are Type 2 diabetic. I try very hard to provide meals that are good for us, and offer variety. Recently a friend gave me a 5 pound bag of red lentils and a 5 pound bag of Hulled Barley - both organic. I've found diabetic friendly recipes for the barley, but almost everything I find for the lentils is very spicy, or curry - not too crazy about that. Anyone have any good recipes they would share? It would also be great to exchange and share ideas, recipes, successes associated with diabetes and controlling it. Fortunately, Spring has finally arrived in Minnesota, so I can get out and walk!

Good for you in trying to stay healthy and provide wholesome food for you and your husband! My grandfather was diabetic and sadly, he didn't take as good care of himself.

I have a reipe for a Lentil Stew somewhere that I can find for you if you would like it. I made a big batch and froze it this winter when I was pregnant and was pleasantly surprised when my husband said he really liked it! He really likes his meat and potatoes!

Gail, Ole Ron is a diabetic too. I have found that he can eat most everything. IF....... We eat only whole wheat pasta and bread. We eat very few potatoes and if we do it is red potatoes. Some reason not as much carbs. He uses sugar substitute. I cook with splenda. Most recipes can be adjusted to cut out a few of the carbs. We have found that the more fiber he eats, the more carbs he can eat. We cut corners when and where we can but I do not use diabetic cook books. Watch the deserts. Low carb or no added sugar is not what it is cracked up to be. Eat as much lean Meat and veggies as you can with a little fruit for desert. Stay away from boxed or prepared foods. Read all the books and test your blood often. There, now you know as much as I do. LOL

I've been learning a lot about lentils lately. I'm hoping to visit Nepal this summer and they are a staple. I have eaten quite a few lentils in my youth when I was a vegetarian but have learned even more now. Did you realize that they have more protein than soy? yep. In Nepal, (and I'm assuming places like India) they are called "dal"...and that is probably where all your spicey foodstuffs are coming in. When you eat "dal" with "bhat" you basically have the staple of Nepal or...lentils and rice. But it's my understanding that it's more like a lentil soup poured over the rice. (I kinda like lentil soup anyway.)

I forgot to add that you need to wash both barley and lentils to clean them well and pick out the stones that may be in the bags!

--Oh and I'm Type 2 and trying to deny it...but because I really want to do this Nepal thing, I've promised my doctor to really really really take my meds daily, monitor my blood sugar, and watch what I eat carefully... I'm just on a twice daily oral med but she thinks I may need more. I don't want more...I want less! But I am having so much difficulty getting the weight off and my doc said it won't come off until my sugar is controlled. That means more exercise and better eating. Alas, not good at either.

Thank you for the links Star and the info regarding barley and especially lentils. I too fight the weight battle, but am determined to take it off - I walk everyday - and ride bike too. Since both hubby and I are diabetic, I cook the same for both of us and am not tempted by food he can have that I cannot, so that is a plus. I retired on June 1 of 2008, and had more time to cook for us, we have both lost over 50 pounds in the last 10 months, but still have a long way to go. Before losing the weight, I too was taking 2 pills a day, now down to 1 and my doctor tells me if I keep this up, I may be able to come off the meds. That would be nice. Best of luck to you, you can do it too!
