I have been eating Spinach three times a week for a month! Who woulda thought the small package of Spinach seeds I planted in the coldframe last September would produce so much Spinach!! So, I drug out our old faithful food dehydrator this morning and I'm going to dry some to use like Parsley Flakes. Recycled some cute glass jars from the trash to store it all in when I'm finished. Wonder if I can dehydrate Daffodils? ...lol...

I got to work outside today, the sun was out and it must have been at least 55 and I loved it! Even though I had to play firefighter. The neighbor kid (30?) was burning wood and misc junk and a blast of wind came up and set the fields around the fire barrel (huge one) and it got away from him. He had me running all around our two houses gathering hoses to put out the fire, we finally had 4 hoses hooked together and got it out. I was a bit worried at first. Check my blog if you want to see a pic of how far it got out of hand. I like the fact that the brush is gone though. #D

Well, I won't be dehydrating Spinach ever again! I had a huge bowl full, loaded up my dehydrator with 7 trays and plugged her in. 32 hours later it finally dried and I crushed it to put in a jar and I got approximately 1/2 cup of Spinach Flakes for my efforts...oh well, live and learn eh? I could have frozen it in 2 minutes.....

1/2 a cup!??! Like you said, you won't be doing THAT again!
I want to try taking some leftover greens, probably chard & kale and blanching them in chicken stock. Then frezzing them, stock & all for soup base. I'll let you know if that works.
