I have some BIG roma tomatoes. I am going to half them and scoop out their insides, stuff them corn bread stuffing mix, parmesan cheese, a little olive oil to hold it all together, parsely flakes, salt, pepper, garlic and then bake them off.
I am going to serve them with a nice grilled pork chop and some white beans, heated up with a little butter, salt, pepper. MMMMMM!!!
I am trying to be more creative and use up what I have.

I have been working very hard at using what I have on hand - I didn't even know for sure what I had in my cupboards - so I did a complete inventory and found some amazing things. My freezer also had lots of goodies lurking under the surface that I had forgotten about. In my defense, I recently retired and now have more time in the kitchen and am using my store bounty, so by the time I get around to some serious spring cleaning - my cupboards won't be so hard to clean! Yeah for me! Your stuffed tomato sounds awesome Heather - how did it turn out? Will try it when I have tomatoes.

They were pretty good. Next time, I will put a little olive oil, salt and pepper inside the tomatoes BEFORE I stuff them. YUMMY!!!! : )

Today is meatloaf- I took some leftover hamburger meat, some left over corn bread stuffing mix, salt, pepper, parmesan cheese, grated up on carrot, 1 egg, mixed, formed into loaf and place in bread pan (Lightly oiled) and covered with a package of 4 cheese instant potatoes and a little butter. Cook 350 for about 30-40 minutes. I like to let it cool because it just tastes better that way. YUMMY!!!!!!

There is a show on the Food Network called Chopped. The contestants are given a basket of 3 or 4 items (usually unrelated) and the chefs have to create a dish using those ingrediants. Heck, I do that almost every day. Plan something, then find something in the fridge that needs used up and have to work it in somewhere. OK so sometimes they don't go together. Some of those chefs need to have some everyday, cooking dinner for the family, living on a budget experience. I could do well on that show. LOL |
