My dad has suffered a tramatic brain injury and my mom is taking care of him. (They were divorced 23 yrs) My mom's health is not great and I am trying to help all I can. I teach full time, tutor twice a week and take grad classes full time(I grad. in May) ARGGGGHHHH.... I would like to help my mom by cooking a week of meals that my mom can just heat and serve. I am thinking a couple crock pot meals, then caseroles and lasagna... Any ideas for meals? I want to give them variety and it is just two, so I don't want to make too much so they are in leftover mode over and over... Thanks for any ideas...
Niki, Omg I am so sorry about your Dad. It is so great of your Mom to take care of him. As far as meals maybe individual chicken pot pie or some chicken soup. Pasta is always good.My prayers are with you and you family. Tina
I am so sorry - yall in my thoughts! Chilli/Soups Brown rice and veggies Brown up meat and freeze in small bags Pre-chop veggies in baggies for freezer Freeze spaghetti sauce Roast of any sort Pork loin (perfect size) Roast chicken This is what I have in my freezer for prep-in larger quanties but easy to make in small batches. Minute brown rice is very easy and if you have browned meat and veggies in freezer all ready down you can have dinner in 15 minutes! One of my folks favorite! Good luck.
