My daughter had her heart set on making a cake today and our recipe calls for shortening. Can anyone offer a quick shortening alternative? Could I just use vegetable oil? Thanks so much!!

I also have a great Crock Pot Chocolate pudding cake that is so easy using unsweetened cocoa. I made it this weekend and the grandkids went nuts for it.

I have canola oil on hand too, perfect! A Crock Pot Chocolate pudding cake? Oh my goodness that sounds divine, I'd love it, thanks so much for offering!

Okay, Here it is. I just bought a new 5 quart Crock Pot and made it in there and it was fine although the recipe itself called for a 3 quart crock pot. This recipe if from the Southern Living Slow Cooker recipe book. I omitted the pecans because the grandkids don't like nuts. I also made the traditional version omitting the cinnamon and the instant coffee granules. There were 6 of us and there was not a crumb left it was that good!

Mocha Pudding Cake


1 & 1/3 cups sugar
1 cup all-purpose flour
1/2 cup butter, melted
4 large eggs lightly beaten
1/3 cup unsweetend cocoa
1/4 cups chopped pecans, toasted (optional)
* 2 teaspoons instant coffee granules
* 1/2 teaspoon ground cinnamon
1/4 teaspoon salt
2 teaspoons vanilla extr5act

Vanilla ice cream (optional)

1. Stir together all ingredients except ice cream in a large bowl. Pour into a lightly greased 3 quart crock pot.

2. Cover and cook on LOW 2 to 2 & 1/2 hours OR until set around the edges but still soft in the center. Let stand, covered, 30 minutes. Serve warm with ice cream, if desired. Makes 6 to 8 servings.

* For a traditional chocolate pudding cake, just omit the cinnamon and coffee granules.

Mary-Alice that looks like a delicious cake recipe! Thanks for sharing it. I only like to make recommended crock pot recipes. There's a lot of dud ones out there for crock pot desserts.

Dawn, I know what you mean about duds. I have made some doozies that even the garbage can rejects. This is an outstanding one and you will not be dissapointed. The 10 year old and 8 year old gave it 2 thumbs up each.

Just wanted to let you know my daughters yellow cake turned out great with oil instead of shortening. I added 1/25 cup vegetable oil (didn't have canola after all!) instead of the two tble shortening that was suggested in recipe and it still looks and tastes great.

Thanks again for the Chocolate Pudding cake recipe Mary Alice, I can't wait to try it!!

I just wanted to add for future needs that plain applesauce can be used in cakes in place of shortening. Just oz for oz for the shortening.
