I made some this afternoon, along with homemade tortilla chips, and it was delicious! Super-duper easy to make and a big hit here.

Take 1 1/2 cups of MaryJane's Organic Black Bean Flakes and rehydrate them as directed, using 1 1/4 cups boiling water. Spread in a small pie dish.
In a separate bowl, mix together 1 package taco seasoning and 1 cup sour cream. Spoon on top of rehydrated bean flakes.
Top with 1 cup grated cheddar cheese (we like our cheese!)
Bake at 350 for 15 minutes, or until cheese is melted and slightly browned.
Serve hot with tortilla chips, or whatever vehicle you use to get dip in your mouth!
Yum yum.

Hey, Jenny- you could use the refried pinto beans from the cannery as well. It is very yummy. :) I use those to make pinto bean cake. Much easier than the whole bean method. I'm all for easy. Hope you're staying warm.
