Has anybody used the budget mix to make waffles? (Alee?) What proportions of ingredients did you use? I want to make waffles on Saturday and we have all this lovely budget mix I would like to use but am not sure of recipe , there are instructions for pancakes and I think waffle batter should be stiffer than pacake batter but.....just not sure - any help would be appreciated Thanks Amy Grace

Amy, I understand, we think pancakes are ok, but we love waffles! Maybe it's a texture thing.... Might have to do the waffle thing Sunday morning again. Hadn't even thought of using the budget mix for waffles.... yum! KarenP

Oh and yeah Julie, you're right about the waffle vs. pancake batter thickness - I'm kind of spacy this week:) Amy Grace

Woo, I made waffles this morning with the budget mix, they were great! I just added water until I got the consistency I wanted for waffle batter. They were great! KarenP

Hi Girls, I made MJF budget mix waffles this morning. Delish! Since it is only two of us I made a small batch but you can easily double what I did... 1 cup budget mix 1 tablespoon sugar 1 tablespoon freshly ground flax seeds 3/4 cup buttermilk 1 egg, beaten 1 tablespoon veggie oil or melted butter 1 teaspoon vanilla extract ~Mix the budget mix, sugar & ground flax seeds together in a batter bowl. ~In a measuring cup, blend together the buttermilk, egg, oil & vanilla. ~Pour the buttermilk mixture into the budget mix and combine. Makes 4 -5 waffles depending on the size of your waffle iron.

Alee - our waffles were really yummy!! Does anyone else eat their waffles with butter and brown sugar? That was my dad's favorite and now mine - he also used to eat peanut butter and brown sugar sandwiches for a midnight snack!! Amy Grace
