Ok, I'm doing something wrong. Twice I've tried to make whipped cream by shaking it in a jar instead of whipping it with my whisk (my blender and mixer are both dead). Both times I ended up with butter. I'd stop and check it and it would be too runny, so I'd continue shaking. Next thing I knew, it was butter. This last time I stopped shaking when it started thickening, poured it into a bowl (still runny) and finished it with my whisk and it turned to butter in just minutes. This shouldn't be so difficult. I thought shaking in a jar would be easier on my hands than whisking for a half hour. I have no problem getting whipped cream when whisking. I always leave the cream out for a bit so it's not ice cold. What am I doing wrong?

I'm not sure....don't shoot me, but I always whip my whipping cream (with a bit of sugar and vanilla) with my electric mixer. I type all day and my wrists really thank me for it :), and I will always get the consistency I seek as opposed to whisking.

The only thing I can think of is that the actual method of shaking actually "separates" the cream, instead of blending it together and speeding up the molecular structure that actually "makes" the liquid form turn into whipped cream.

I agree with the above post, I really think you need to whip some air into it.

Was the butter good though?

I use a cold bowl,and (often leave with the beaters in freezer before whipping). If the cream is too fresh it will take longer to whip.. It turns rather quickly to butter. Perhaps shaking the jar not hard enough? it can be tempramental.

You CAN make butter by mixing it with a mixer too long too...ask me how I know THAT???
But seriously... it is sure hard to make whipped cream with shaking. I get butter too. I do use a mixer for my whipped cream..and add a little vanilla, and sugar too.
Hey...at least all was not lost..butter is a good thing!!

..I used to help out in my son's classes when they were small and we made butter in the first grade. There were 2 jars and we all took turns shaking/moving them. It turned into butter and we had it on saltines! It was delish... the kids were amazed (and so was i!) :)

As I am thinking about this, it seems to me, butter is just one step beyond whip cream, just like vinegar is one step beyond wine, NOT?Maybe watch it more carefully and stop earlier,,,with the mixer.
Because when we lived with no electricity, we would shake it for both and then with elec. we would use my mixer to do both.....Dont know.....

Yep, butter is a good thing. I simply learned how NOT to make whipped cream! I thought I could save my hands/arms from whipping with a whisk for so long. Someday, I'll have a new mixer and will go back to that method. I'm holding out for a really good one so, it'll be a while yet. That's ok, at least I know I can do it without power if I have to. And I now know how to make small batches of butter without power, too!
