Have you tried the carmels in the new Mary Jane's magazine? It is great! I made 2 batches and the family ate it faster than I can make it. Last night I made another batch and put on a skillet with butter and pecans and a little salt to be cooking at the same time, stirring occasionally. I cooked the carmel to a softball stage and then poured the carmel mixture into the skillet with the pecans, stirred and cooked just a little together, poured into a small square buttered pan and this morning, the carmel is firm but still soft in the mouth and it is delicious. I wrapped the small pieces in wax paper. My daughter went on and on about them. We had a large harvest of all kinds of nuts this year and I purchased pecans from local farmers.

Sarita- I am getting ready to make the caramels, they sound delicious. I could only find light corn syrup at the Co-op, hopefully it works for this recipe. The pecans would be wonderful, I am using walnuts and coarse sea salt. Rebekka

Terri, good try! Let me know if you can find a fat free carmel recipe. After eating on these carmels, I am going to need to find some low fat, no calorie foods to eat in order to get in my jeans.

I made the caramels just before Thanksgiving. I thought they definitely needed the salt! My son and a couple of our friends liked them though.

My daughter and I made MaryJane's caramels during a raging snowstorm last weekend--they were wonderful! I took some to work, and everyone gobbled them right up.
I even wrapped some in butter wrappers (ours are foil here in Canada) and they looked so pretty!

RIGHT Cheryl, lol
I made some Peanut Butter Fudge yesterday, but BOY are they ever so sweet! The recipe called for a lot of sugar so I poured it in. But now they are just crunchy sugar fudge, lol. I have to throw them out, can't eat these. Am gonna try to make some others, with way less sugar this time and more PB, lol.
Hugs from Marian/Dutchy, a farmgirl from the Netherlands :)
