So it's been years since I did this..I remember my kids loving them for snacking.. Any great ideas for how to do this...
I am making pumpkin bread/& cookies from the meat part..

I rinse my seeds and lay them out on a sheet pan overnight to get rid of all the excess water. Then I toss with a TINY bit of EVOO and salt and bake em in the oven at around 250 until they are nice and brown. Usually a few hours, tossing occasionally. I like mine a little darker than most. I find them easier to chew. If they are too light they can be really chewy in my opinion.

Thanks Julie, I do remember letting them dry on baking sheet overnight. I might spice them up a bit with some chili powder.

Ok they turned out Great... I seasoned them with Chili seasoning.. Yummy.. Great on a salad or just mixed with raisin & pecans & almonds for snacking.

Has anyone tried anythin besdide chiliseasoning? Have a whole lot of pumpkinseeds to do and very little imagenation to work with. All ideas would be helpful.

Adobo spice mix is great. I use it on just about everything. Look for it with the Spanish/Puerto Rican foods in the supermarket.
