Hi All!

I know some of you have been following my adventures in food lately. Doug and I are trying out new recipes. I am getting excited to hopefully be using fresh garden produce next year for these recipes, but until then anything tomato comes out of a can :(

This Goulash turned out awesome! It was so easy and good! So Good!

First boil some pasta that holds it's shape well for about 2/3 the normal cooking time. Drain and set a side.

Preheat oven to 350 Degrees

Grease casserole dish and set a side.

Brown hamburger (amount varies depending on how many people you are feeding.)

Make sauce using one can of diced tomatoes (don't drain), one can tomato sauce or reconstituted paste. Add in various veggies as you have and see fit include some or all of the following. I have starred the ones I used:
*Can of Black beans
*Can of Black Olives
*2 Cloves Garlic (can be substituted for dried or powdered garlic if needed)
*One medium onion (can be substituted for dried or powdered onion if needed)
*One Can of sweet Corn

Spice to taste but don't salt. I used pepper, parsley, oregano, basil, rosemary and thyme.

Bring sauce to boil. Combine with meat.

Pour noodles into dish and pour sauce over noodles. If sauce does not cover noodles, add water till level is above noodle height. Place uncovered in 350 degree oven and bake for 40 minutes.

Halfway through, add sliced Mozzarella over top of casserole to melt.

Yummmo!! So good!

Thanks Angie! I am glad you like the recipes! I am all for a quick and easy meal, especially if they taste good and are good for you! With Nora running around I don't get much time in the kitchen undisturbed and I have to worry about carrying lots of hot things around because she is into everything! LOL

Doug is making Crock pot Chili today so it will be ready for him when he comes home. Maybe I will force him to post under my name with that recipe as well. His chili is always really good :D

Alee I hope you sent that one into Julie, who is doing the second cookbook for MJF. That sounds really good!

Thanks Alee, I feel a dinner party comming on. Sounds like the recipe makes a pretty big batch and I have not had good luck freezing pasta so I'll invite friends to help eat it. We have some dear friends that will come running whenever I call and tell them that Ole Ron needs help with something. They are always happy when they find out it is a new recipe and not cutting down a tree that he needs help with.

Belle- It can make anywhere from 8-10 servings depending on serving size. We were tired and decided not to make any extra fruit and vegetable sides, so for the three of us we ate two nights ago for dinner, then we had it for lunch and dinner yesterday as well. It is all gone now except for a Nora sized portion that I saved for lunch.
