Wow!

This recipe looked like it was going to take a lot longer than it did. It came together really fast (as in I should have had the pasta cooking a bit before I did! LOL).

Doug's first bite sounded like this "mmm, Oh my gosh! That sauce is soo good!"

Yay! Another score out of the Betty Crocker's Best of Healthy and Hearty Cooking cookbook!

We are branching out of our comfort zone which is great. The family favorites will always be there to back me up, but I am enjoying these new tastes and combinations!

1/4 cup coarsely chopped sun-dried tomatoes
1/2 cup chicken broth
4 skinless boneless chicken breast halves
1/2 cup sliced mushrooms
2 tablespoons chopped green onions
2 cloves garlic finely chopped
2 tablespoons dry red wine or apple juice
1 teaspoon veg oil
1/2 cup skim milk
2 teaspoons cornstarch
2 teaspoons chopped fresh or 1/2 teaspoon dried basil leaves
Cooked fettuccine

Mix tomatoes and broth. Let stand 30 minutes. Trim fat from chicken. Cook mushrooms, green onions, and garlic in wine in 10-inch non-stick skillet over medium heat about 3 minutes. Stirring occasionally until mushrooms are tender. Remove mixture from skillet. Add oil to skillet. Cook chicken in oil over medium heat until brown on both sides. Add tomato mixture. heat to boiling, reduce heat. Cover and simmer about 10 minutes, stirring occasionally, until juice of chicken is no longer pink when centers of thickest pieces are cut. Remove chicken from skillet and keep warm.

Mix milk, cornstarch, and basil. Stir into tomato mixture. Heat till boiling. Stir constantly. Stir in mushroom mixture. serve over chicken and fettuccine.

We really liked it! The only thing that went wrong is that I had to cook the chicken over-long because of getting Doug from work, so our chicken was a bit dry.
