Frost hit last night! So i have green tomatoes waiting in a basket....I'm trying to decide what to do with them. I have a lot, so I'd need something I can can or freeze. I found a green tomato relish recipe that got rave reviews online, but...I don't eat very much relish. :( I also am thinking of green tomato mincemeat.

Any other suggestions?

I just copied and pasted from another post I had here.

Fried Green Tomatoes (my own recipe)
Green tomatoes, sliced about 1/4" thick
whole wheat flour
eggs
1/2c bread crumbs
1/2tsp garlic powder
1/2 tsp black pepper
1/2c parmesan cheese
Salt, if desired.

Put flour in a deep plate. Break eggs and scramble in another deep plate. Mix remaining ingredients into yet another deep plate. Dip both sides of tomato slices in flour, then egg, then seasoned bread crumbs. Fry in oil in a pan until golden brown on both sides. Serve warm. Can be re-warmed in a microwave.

I also do this with zucchini. My co-workers look forward to the end of my garden because I always bring fried green tomatoes and zukes into work for a treat.

Green Tomato Bread
3 eggs
2c sugar
1c oil
1tbs vanilla
1tsp salt
1/4tsp baking powder
1tsp baking soda
2tsp cinnamon
1tsp cloves
2c white flour
1c wheat flour
2c grated, unpeeled green tomatoes

Beat eggs until light and fluffy. Add all ingredients except flour and tomatoes. Mix well. Stir in flour, mixing well. Fold in tomatoes. Bake in 2 greased and floured loaf pans for 1 hour at 325 or until bread tests done (mine takes an hour and a half). I sometimes add chopped walnuts, if I have them on hand. This bread freezes very well.

Green Tomato Salsa
Not really much of a recipe here. You pretty much mix it up according to taste and can in a hot water bath:
Green tomatoes
Jalapeno peppers
onions
bell peppers
cilantro
minced garlic
salt

I make green tomato relish with cabbage and onion about every other year. Makes a big batch and no one eats it but me. I tried a green tomato pie. I don't recommend it. Tasted OK but looked like poop. Can we say poop? The next day, we scraped out the tomatoes and ate the crust. Our first frost is just around the corner. I covered greenbeans, peppers and tomatoes last night but only got down to 38. Supposed to be warmer at night the next few days. I am working like mad to get the apples picked. Will have a ton of green tomatoes.

Lisa, the green tomato salsa sounds good. I will try a small batch. Will let you know what we think.

Thank you for the great recipes!! I didn't do any salsa yet this year - not enough red tomatoes, ironically, so I am liking the green salsa idea alot!

The green salsa is so good. It's the perfect salsa for the chile verde dh makes.

I absolutely LOVE pickled green tomatoes. Just pickle 'em up (especially the small ones) like you would a dill pickle, pop in a clove of garlic, process and YUM!!!

Lisa, do you process the green tomato salsa in a boiling water bath? Got my peppers, tomatoes, onions, garlic picked and ready to work up. Have tons of cilantro in the herb garden. Can't believe I am taking on a new canning project.

My mom never fried green tomatoes, only red. I've tried both, but prefer the red. Easier because we just fried them in bacon fat with lots of salt. Nummy.

We've had our frost here and I had picked numerous tomatoes earlier. Now the ones that look iffy, but not spoiled, go to Penny the Pooch. She loves tomatoes with her dog food. I think it also helps her digest her food better and makes less droppings to clean up.

Yes, Belle, I just do the boiling water bath. Green tomatoes are pretty acidic and are fine for that.

Betty, you don't bread your fried tomatoes? The red ones would have a lot more juice in them and I don't see how you could get anything to stick to them?

I also make the fried green tomatoes but I use cornmeal instead of the wheat flour!
YUM! all our green tomatoes have been gone since the beginning of Sept.

Lisamarie, the red fried tomatoes are a real mess to eat, but oh, so delicious. Sometimes I have to eat them with a spoon. It's the way I've always eaten them and just plain like them that way. Of course the fat content is always a problem--so only once or twice a season.

Lisa, made the green tomato salsa today. It was just OK. Need to work on the perportions of onion, garlic and peppers. Our jalapeno peppers are not hot. They were a couple of months ago but not now. Should have put in a habanero. Have tons of green tomatoes and onions and garlic going to waste so can try another batch and see what we think. Of course while I am playing with the salsa, didn't get anywhere with the apples. picked another 2 five gallon buckets today. The rest are for who ever wants to pick. (or not)

But for green tomatoes, I fried up a bunch for supper tonight. Yum-O. I can't let any batter go to waste so I fried up some jalapenos and mushrooms. I feel like I am going to slide into bed tonight with all the grease I had for supper.
