I got a new pressure canner this summer and I'm using it for the first time. I don't know if I just can't remember how long it took with my old one, or if there's something wrong with this new one, but I got my jars ready and set them into the canner in the boiling water, put the lid on, put the pressure regulator on, and waited for the pressure to start to go up on the gauge, and waited, and waited, and waited. The water has been boiling for about 1/2 hour, the lid is on tight, but the pressure gauge still says 0. What am I doing wrong? or is it a defective gauge. Now I've got all these jars ready and I'm not sure what to do!!

Oh lord Sherri, DO NOT take the lid off that canner until it's cooled down!! I'm trying not to be dramatic here, but rather err on the side of caution.
Sometimes the pressure release valve stem becomes plugged. This would allow the pressure to continue to build inside the canner. It is possible the gauge just does not work or isn't seated properly to register, but please, to repeat myself, err on the side of caution!
When the canner is COMPLETELY cooled, then remove the lid and see if the valve stem is plugged.

Thanks Diane - I knew not to take the lid off thank goodness!! Do you mean the valve stem with the pressure gauge on top? There is steam coming out of the bobble top.

Well, I think what I must have is a defective gauge. Rats!! Any advice on what to do with the food I have in the jars? It's meatballs in sauce, so I can't waterbath can them. I guess I"ll have to take the canner back where I bought it. It never did budge even a smidgen off 0.

Yes, that's what I meant Sherri. Sorry about all the work you've gone to. I don't have any suggestions other than to freeze it all now. Geez, how frustrating!!
I didn't want to cause fear, but I worked with a fellow who was canning chicken and the same thing happened to him so he removed the lid and the jars all exploded. He was seriously injured so I kind of panicked!

Oh, I understand - no worries. I appreciate your concern. I grew up with a really really careful mom when it came to canning, so I'm pretty careful about stuff like that.

Yes, Amy - I read the book really thoroughly and it explained why that was necessary, so I tried to do everything just right. Anyway, I went up to the local hardward store and asked them if they had any way to test the gauge. They didn't but they told me I had a missed a gauge checking clinic that WSU extension had put on in the local office. They said they sold the same model that I had and that FOUR people had come back after the clinic saying their gauges didn't work properly and wanted the hardware store to send them back for a replacement. Unfortunately, I didn't buy mine there, but I'm going to go to the place I bought mine this weekend and see if they'll do anything for me.

Call the WSU and ask them (nicely) if they would pleaseee, if you brought it to the office, check the gauge for you. Does your canner also have the "rattler thing" too?
