does anyone have a recipe for homemade crackers? i used to have one years ago and on this crisp fall day homemade crackers with soup sounds so good!! also how would a farmgirl obtain a copy of the farmgirl cookbook #1. i would love to have one!!!! cathy |

This is a high-tech cracker recipe. I haven't tried converting it into a hand made version yet, but if you have a food processor give it a go.
3 cups whole wheat flour 1 tsp salt 1 1/2 cups warm water optional toppings parmesan, salt, sesame seeds, cumin seeds, cayenne
Place flour and salt in food processor and process for 10 seconds to mix thoroughly. With the motor running , ad the water in a steady stream, then process for 10 seconds longer. The dough should have formmed into one large ball, if not feel the dough,: if it feels sticky, add 3 to 4 T flour and process briefly until ball forms, If dry, start processor again and add 2 to 3 T water.
Once you have a ball of dough, process for 1 minute more, no longer. Turn onto lightly floured surface and knead for 30 seconds. Cover with plastic wrap and let rest for 30 minutes.
Preheat oven to 500 degrees and place two racks near center.
Divide the dough into 8 pieces. Work one piece at a time, leaving the others covered. with lightly floured hands flatten the dough with your palms. Then roll it out to a very thin rectangle or round,as even as possible. Place on baking sheet or pizza round. Sprinkle on one of the optional toppings or leave plain. Using a knife or pizza cutter, cut through the dough to make a rectangular crackers. Spray the dough lightly with water and place in the oven.
Begin rolling out the next piece, keeping an eye on the cooking on. (Crackers brown from underneath.) Check on them 2 1/2 to 3 minutes after they go in. As soon as the thinnest patches have started to brown take them out. If necessary, continue baking, checking very 30 seconds. You can also sprinkle toppings on the pan before you place the dough. Separate and let cool to be placed in a well-sealed plastic bag or tin for up to a month.

laurie, thanks for the recipe,i will try it this weekend. homemade crackers are so awesome!!! i think i'll make some tomatoe soup to go with. have lots of tomatoes left in the garden. cathy

Cathy, I have a recipe but you have to let the first part of the dough rise for 24-30 hours! Past that it sounds a lot like Laurie's recipe!
