Chicken Kiev. Flatten out about 4 chicken breasts, dab each with softened butter, sprinkle with parsley, place a slice of Jack cheese on each. Roll up breast, secure with a toothpick. Dip each roll in melted butter, then coat with breadcrumbs. In a shallow baking dish, bake at 350* aprox. 25 minutes. We'll probably have broccoli and mashed potatoes with it. ;)

BLTs with homemade bread.
And it would be homegrown bacon, except we really are not liking the flavor of the bacon we had processed this year. :(

we had chicken breasts, steamed rather than fried. basmati rice, steamed asparagas, tomato salad, I have various heirlooms and like to cut them all up, sliver some onions, drizzle olive oil, ass fresh basil when I have it, its a really pretty salad, and I made enough extra to take for lunch today.

Homemade chicken strips with sweet and sour or ranch dipping sauces. (the sweet and sour sauce is left from the huge pan of it I made for last night's supper) roasted seasoned yukon gold potato wedges, and a big green salad. Everyone is going different directions tonight so this will be a quick hearty meal. Kary..stuffed red peppers sound wonderful!!!

Last weekend was our community festival, and my group makes and sells reuben sandwiches. Last night at our meeting, they sold the leftover bread, meat, cheese, etc., so tonight, we had reuben casserole -- cubed rye bread, then sauerkraut, then the corned beef, then 1000 Island dressing, then swiss cheese, then bake the whole thing for about 1/2 hour. Quite yummy, but you sure wouldn't want to eat that too often -- I don't even want to think about the fat and salt in that dish!

I'm making Italian beef sandwiches with leftover beef and some broccoli that's leftover and some roasted potato wedges (a little olive oil and whatever spices you want over the unpeeled potato wedges in a pan and roast in the oven). I have chocolate chip cookies I made the other day for dessert. www.allrecipes.com has great recipes rated 1-5 stars and adjustable for however servings you want to make....great ideas...great recipes!

MMMMMMM......it is so satisfying to know there are actually people out there that know how to cook and enjoy it, at least it sure sounds like you enjoy it by reading your posts, lol When my grandson asks me why I cook homemade food, I tell him I am a real person and I eat real food. So on that thought, maybe tonight we will have navy beans with the ham bone from the hogs we raised. Perhaps some coleslaw to go with it, or a nice carrot salad.

I had Red Lobster the other night too, I ordered the 'Endless Shrimp' deal going on now. Last night my MIL cooked and we had pork roast with gravy, boiled potatoes, sugar snap peas, and salad. I'm thinking about making chili and grilled cheese for tonight or for Sunday. As it's the last night here for my inlaws they might want to go out to eat again.
